Warm Goat Cheese, Figs and Caramelized Onion Salad

  • 150g lamb's lettuce
  • 1 onion (julienned)
  • 2 teaspoons butter or olive oil (I use to use olive oil, but butter tastes wonderfully here as well)
  • 2 teaspoons brown sugar
  • 4 figs (sliced)
  • a handful cherry tomatoes (halved)
  • 50g goat cheese (cut into rounds)


Start by caramelizing the onions. First, you heat 2 tsp. of olive oil (or butter) in a pan and then you add the onion and brown sugar. Sautee until it looks done, which will take about 5 minutes.
Slice both the figs and cherry tomatoes.
Place goat cheese rounds in a microwave safe plate and nuke for about 5-8 seconds, until it's abit warm but not melted!
Arrange tomatoes, figs, cheese and onions on top of the lettuce and enjoy!


This it not the way to caramelize an onion properly, but it works nice here!
