Starbucks Copycat Double Chocolate Muffins

Ingredients

  • 4 Tbsp. buttermilk
  • 150 Grams chocolate chips
  • 75 Grams light olive oil (or vegetable oil)
  • 2 Large eggs
  • 16 Grams baking powder
  • 250 Grams 2% greek yogurt
  • 60 Grams cacao powder
  • 140 Grams sugar
  • 230 Grams flour

Directions

Whisk all of the dry ingredients in a bowl. Mix all of the wet ones in a different bowl.

Add wet ingredients to dry and mix until combined. I use an electrical whirewhisk and I've never overmixed the batter, so you can use it too if you wish! Mix-in 100 grams of chocolate chips.

Fill metal muffins tins more than 3/4 full. Make sure that the molds are very rigid or the muffin won't grow as tall! Sprinkle some chocolate chips on top.

Bake 8 minutes at 220ºC and then lower the temperature to 180ºC and bake for 15-16 minutes more until you insert a toothpick and it comes out clean.
