Coconut Mocha Energy Bars

  • 1 cup dates (about 18-20)
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 3-4 Tbsp. cocoa powder
  • 2 Tsp. instant coffee granules
  • 3-4 Tbsp. maple syrup (honey works perfectly as well but bars will no longer be vegan)
  • 4 Tbsp. coconut flakes
  • a dash of vanilla
  • a Pinch of salt
  • 1 Heaped cup puffed brown rice (unsweetened)
  • 1/2 cup walnuts (don't put these into the food processor!)


Soak dates and raisins in water for 10 minutes so they're easier to blend.
Blend dates + raisins in a food processor until a paste forms.
Now, add the rest of ingredients, except for puffed rice and 1/2 cup of walnuts. Pulse until a ball forms.
Pour puffed rice and walnuts into a bowl and mix with the date ball until rice and walnuts are incorporated.
Press mixture into a baking tray or container and refrigerate until firm.


I always use decaf coffee because I can't tolerate caffein, and I recommend you use decaf too if you're making these for children.

If you want plain chocolate bars, omit coffee. They'll be tasty anyway.

This recipe is raw, vegan and gluten free.

These keep well for up to 6 days (that I know of, they probably last longer, but not in my house!) in an airtight container in the fridge.

You can sprinkle some coconut flakes on top too.
