Butternut Squash and Potato Hash

Ingredients

  • 2 Small potatoes
  • 250 Gr. butternut squash
  • 1 Medium onion
  • 2 Cloves garlic
  • 6-7 asparagus
  • 100 Gr. serrano ham
  • 1-2 Tbsp. manchego cheese (grated)
  • extra virgin olive oil (for the pan)
  • 1 Tsp. dried oregano
  • 1/4 Tsp. smoked paprika

Directions

1.
Cube butternut squash and potatoes. Parboil them for 5-6 minutes so they are soft and get crispy sooner when you fry them.

Julienne onion and mince garlic.

Heat some olive oil in a pan, and when it's hot, add potatoes, garlic, butternut squash, onions, ham, salt, spices and asparagus and sautee for 15 minutes (on medium heat so it doesn't burn!) until done.
4.
While it's still hot, add some manchego cheese on top so it gets melty.

Note

You may use parmesan and bacon if you can't find Manchego cheese and Serrano Ham.
