Brownie a la Mode Layer Cake

  • 500 Ml. vanilla ice-cream (storebought please!)


  • 350 Grams flour
  • 280 Grams sugar
  • 135 Grams cocoa powder
  • 1/2 Tsp baking powder
  • a Pinch of salt
  • 3 eggs
  • 300 Ml. buttermilk
  • 200 Ml. brewed coffee (decaf will do)
  • 180 Grams melted butter


  • 200 Ml. heavy cream
  • 250 Grams milk chocolate
  • 50 Grams butter


For the cake, mix all of teh dry ingredients in a bowl, and then add all of the wet ones minus the coffee.
Whisk until ombined and add coffee. Batter will be quite thin.
Pour batter into two 22cm. round pans and bake at 200ºC (400F) for 25-30 minutes.
Let it cool before you slice it. And freeze one hour prior to assemble the cake.
To assemble the cake, make sure that it is completely cool so you can slice it perfectly.
Once you have two perfect disk, spread a very thick layer of ice-cream into one round, and top with the other one. Freeze the cake.
To make the ganache, boil the cream and then remove it from heat and add chocolate and butter, stirring until they both melt and ganache looks smooth and glossy.
Let the ganache cool before you pour it on the cake.
Once you pour it, freeze. cake inmediately
Get it out of the freezer one hour before you plan to serve it so you can slice it.


If you really like chocolate, you can use dark instead of milk chocolate for the ganache.

Use storebought ice-cream, as thickeners will help the cake keep its form.

Make sure that the ganache has cooled off and that the cake is frozen before you pour it!
