Thai-Style White Bean Peanut Dip

Post in collaboration with Ecomil. Opinions are, as always, my own.

I know it’s Tuesday and the weekend couldn’t be further away than it already is, BUT how about start preparing some cool party recipes for the upcoming weekend?

This white bean dip is smooth, creamy and slightly spicy, with a hint of lime and a touch of peanut. Does it sound amazing already or…? Oh well, let me tell you about the crispy peanut lemongrass topping: YEP, it is INCREDIBLE too, and the perfect companion for all kinds of veggie sticks, bread and crackers.

I don’t know about you, but I’m personally a big big fan of all things Thai. The sweet and tangy combos and the additions of fresh, vibrant ingredients make it one of my favourite styles of cuisine, no doubt. That’s one of the reason why I’m head over heels with this lovely Thai-spiced coconut cream by Ecomil.

It’s the perfect thing to add to dips, curries and stews to get that really special, magical touch. Plus, I cannot get over how well the coconut cream base works with it – it’s one of my favourite veggie creams to feature in savoury recipes as they always turn out so rich and luscious!

As it happens with the entire Ecomil range, this cream is made with no nasties, and even features organic ingredients. They also pay special attention to allergens, so you can avoid (and clearly see on their website) everything you can’t have! I’m super in love with the entire Cuisine range, but if I had to choose, this cream would be my absolute favourite!

Which other ideas to use it do you have?
