Chocolate Berry Mini Muffins

Hello my loves!

Long time no see, but I just took a small blogging break in order to focus on my French lessons and to go on a small trip to Granada. It was a lovely vacation, for sure! My friend and I got to see such beautiful places, the most amazing views and we also drank the best wine and ate the BEST Spanish tapas.

I’m attaching some pictures of the city so you can see how amazing everything looked. Granada is a destination that I would totally recommend, since there are many stunning places to visit (omg, the Alhambra was so beautiful!), and there are many amazing cheap places to eat at. Plus, mmm, you get free tapas with your beer/wine/even water!!!!, so what more could you ask for, really?

My friend and I did most of our eating at tapas places (again: free tapas), but we did go out for a nice dinner one of the nights, which was also super affordable thanks to a Groupon deal we got. And the food was amazing, oh my!! Let me know if you’d like to see more pictures about the trip, because my camera roll is full of them!

Now, let’s move onto the mini muffins!! Could they get any cuter?? I don’t think so!

As you know, I’m a lover of all kinds of muffins – be it the bigger ones or the smallest cute little things… But let’s face it… I probably like the smaller ones even better! They’re so adorable AND you get to eat like a dozen of them. Isn’t that the best deal ever or what?

This recipe here is not only fairly nutritious, made with spelt flour, yogurt and berries, but the mini muffins themselves turn out absolutely fluffy and moist too. They keep for long, and they’re great to add to lunchboxes to enjoy as a wholesome, delicious snack!

Chocolate Berry Mini Muffins


  • 1 cup (130g) spelt flour
  • 1/2 cup (90g) coconut sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup (75g) light olive oil
  • 2 eggs or "earthly eggs" - see below
  • 2/3 cup (150g) yogurt of choice
  • 1 tablespoon vanilla extract
  • 1 teaspoon white wine vinegar
  • 100g berries
  • 1 tablepoon of flour for the berries
  • 40g chocolate chips


  1. Preheat oven to 180ºC (375F) and line 24 mini muffin cups (or 8 normal ones)
  2. In a bowl, mix together baking powder, salt, flour and sugar.
  3. Add in eggs, yogurt, vinegar, oil and vanilla and stir to combine.
  4. Cover the berries in one tablespoon of flour and fold them gently into the batter. Then, add the chocolate chips.
  5. Fill the muffin cups.
  6. Bake at 180ºC (375F) for 10-12 minutes and enjoy!


To make one "earthly egg", mix 1/2 tablespoon of each: ground flax, soy lecithin, oil + 3 tablespoons of water.

You could also use a flax egg (although this doesn't work as greatly)
