Sticky Sweet & Sour Tofu

Post in collaboration with La Finestra sul Cielo. Opinions are, as always, my own.

I’m so, so, so excited about today’s recipe you guys have no idea.

First of all: it’s one of those meals I eat allllll the time, so you bet I’m super looking forward to sharing with with you, since I’m hoping you’ll like it as much as I do.

It’s easy to make – seriously, mixing all the ingredients takes like 5 minutes tops, and then it’s marinade time, which doesn’t require any of your attention whatsoever, and a quick sautee on the wok or pan, and BOOM, dinner is on the table in like 20 minutes of hands on time. And, oh, this recipe makes such fantastic leftovers too, which is also the reason why I’ve been eating so much sweet & sour tofu this week. Am I complaining? Not one bit.

This recipe is not only ridiculously delicious, but super healthy as well! It’s every bit as good as takeout, but so much more affordable and nutritious. As you know, tofu is high in good quality plant protein, as well as a great source of calcium. Paired with vitamin-rich vegetables and brown rice (also high in minerals, fibre and plant protein, specially when paired with the tofu, which increases the protein quality and bioavailability), it turns out a filling, wholesome meal that I guarantee you won’t want to stop making.

Been there, done that.

If I haven’t convinced you to try this tofu yet, let me tell you that you probably have all the ingredients for the marinade on hand, since they aren’t bizarre in any way, all of them are simple ones! So get in the kitchen and start whisking 😉

Last but not least, I’d like to mention that using a good quality tofu is key when preparing this kind of meal. Most people who don’t like tofu tend to try versions where the flavour is way too strong and overpowering, and then tend to think they actually dislike tofu. That happens wayyyy too often, so that’s why I like to recommend you my favourite brands, and I will say that this version by La Finestra sul Cielo is definitely one of my favourites! The texture is soft, and the flavour is mellow and doesn’t overpower any other ingredient.
