Hazelnut Granola with Cookie Dough Chunks

Good afternoon, my loves!

I’m going to keep things super short and sweet today (what a surprise, huh?), but I just had the craziest day, back to uni and busy with a million different things… One of which is some repair work at the new flat’s kitchen, so you can imagine how hectic life is right now.

Let me just say two words: cookie dough.


Okay, that’s three. Apparently I’m not even able to count properly today, but that’s life when pretty much all of your neurons have given up, I guess.

Hazelnut granola, with cookie dough chunks. Need I say more?? 

I will mention, that, as unhealthy as it may sound, it’s actually quite a balanced breakfast so…. You’re welcome.

I’ll let the pictures do the talking, so they can convince you to get yourself in the kitchen and give this a go.

Hazelnut Granola with Cookie Dough Chunks

Yield: 10 servings


  • For the cookie dough:
  • 70 grams spelt flour
  • 50 grams coconut oil
  • 40 grams coconut sugar
  • 15 grams hazelnut milk
  • 1 teaspoon vanilla extract
  • A handful of chocolate chips.

  • For the granola:
  • 250 grams rolled oats
  • 55 grams hazelnuts
  • 80 grams coconut oil
  • 120 grams maple syrup
  • 1 tablespoon vanilla extract
  • A pinch of sea salt


  1. To make the cookie dough, whisk together melted coconut oil, flour, sugar, milk, and vanilla until smooth.
  2. Add in chocolate chips and stir to incorporate them into the dough.
  3. To make the granola, whisk together oats, chopped hazelnuts, melted coconut oil, maple syrup and vanilla.
  4. Line a baking tray with parchment paper and place both the granola, and chunks of the cookie dough in it.
  5. Bake at 180ºC (375F) for 22-24 minutes, stirring the granola halfway through, so it doesn't burn.
  6. Let it cool for at least 40 mins before eating (or it won't be crunchy otherwise).
  7. Enjoy!
