Caramel Coconut Frosted Chocolate Gingerbread Cake

It’s that wonderful time of the yearrrrrrrrrrrrrrrrrrrr! Everything’s covered in pretty lightning, supermarkets are crammed with chocolate and it’s acceptable to eat nothing but gingerbread for three days in a row (I hope).

And trust me, you’ll want to be living on this luscious gingerbread for the rest of your days: it’s deliciously moist, chocolaty and packed with ginger and cinnamon flavour… And that frosting? Oh, boy, that frosting really is the stuff dreams are made of.


Thick, smooth, glossy goodness. With a hint of coconut and a kick of caramel flavour… You’ll want to bathe in it. Not that that thought has ever crossed my mind or anything… It’s not as if I had a bathtub in my new place, you know…

Otherwise, I’d do it.

There, I said it. Judge me all that you want. It is that good.

Best thing about it, though? It might look like pure decadence in chocolate caramel form, but this cake is actually a really wholesome one. Does that mean you’re allowed to have it for breakfast?

I don’t know, I’m not the boss of your life. 

But if you want some advice… you really, really should. Can’t start the day better off than with a big, big slice of gingerbread and a dollop of glorious caramel frosting. Add some coffee on the side and you’re all set. But don’t forget to invite me over because that’s totally a breakfast party I want to join.

Egg Replacer by Bob’s Red Mill: as you probably already know if you read often, I’m a big fan of vegan baking, so I love finding a good egg replacer brand to make sure that all of my cakes and other baking goods turn out fluffy every time. This blend is really, really good and makes the cake come out every bit as good as their non-vegan counterparts.

Organic Coconut Milk Caramels by Cocomels: if you love toffee but don’t eat any dairy, you’re going to absolutely love these caramels! They’re every bit as good as the real deal and then some. Oh, and the slight hint of coconut? Madness. So, so good. They also make a brilliant topping if you can stop yourself from eating them all in one go.

Organic Ceylon Cinnamon by Frontier Natural Products: hands down the best ground cinnamon I’ve ever had. So aromatic it can take any dessert from good to the bomb dot-com.

Chocolate Coconut Milk Powder by FunFresh Foods: Not only is this powder delicious when incorporated into the batter of baked goods or frosting, but it also makes a delicious hot drink mixed with some warm milk. It’s amazing this time of the year, really!

Premium Baking Cocoa Powder by Ghirardelli: an oldie but a goodie! This unsweetened cocoa powder is the perfect way to add some chocolate flavour to all of your desserts. So rich and wholesome!

Ground Ginger by Simply Organic: just like with the cinnamon powder previously mentioned, using good quality spices makes a world of difference. The flavour is really out of this world!

Madagascar Pure Vanilla Extract by Simply Organic: again, another case of having quality ingredients to take your desserts (or breakfast!) to a whole new level. With this extract, a little goes a long way when it comes to adding the most lovely flavour to your desserts.

Caramel Coconut Frosted Chocolate Gingerbread Cake

Ingredients

  • 140 grams white spelt flour
  • 45 grams cacao powder
  • 135 grams dark brown sugar
  • 2 tbsp. egg replacer + 6 tbsp. water
  • 1 tsp. baking powder
  • 120 grams golden syrup
  • 80 grams coconut milk
  • 120 grams coconut oil
  • 1 tsp. vanilla extract
  • 1 + 1/2 tsp. ground ginger
  • 1 + 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • -
  • For the frosting:
  • 200 grams coconut butter, melted
  • 50 grams coconut milk toffee caramel bits, melted
  • 20 grams chocolate coconut milk powder
  • 1-2 tbsp. coconut milk (optional)

Instructions

  1. Preheat oven to 180ºC (375F)
  2. Combine egg replacer with water and let mixture sit for 5 minutes.
  3. In order to make the cake, whisk together flour, baking powder, spices and brown sugar until fully combined.
  4. Add in the faux eggs, golden syrup, melted coconut oil, milk and vanilla extract and whisk until smooth.
  5. Line a round baking pan with baking paper or grease it with non-stick cooking spray and pour batter inside.
  6. Bake for 45-50 minutes or until you insert a toothpick in the centre and it comes out clean.
  7. To make the frosting, whisk together melted coconut butter and melted caramels until smooth. Add in coconut milk powder and milk, if needed and whisk until smooth.
  8. Cover cake in the frosting after cooling off.
  9. Top with pecans, pomegranate bits and toffee caramels for an extra festive touch and enjoy!
