Creamy Garlic Cashew Shiitake Gnocchi

Hello everyone!

Long time no see, but lots of super exciting things have happened lately:

Your girl finally made the move to Ireland (!!!!!!!!) and has been enjoying those endless sunny days in Dublin (hah). Now, seriously, I’ve been loving this country to bits, keeping myself busy with university stuff, cool plans and great new friends that I couldn’t be more grateful for. Oh, what a month September was! So so intense. I’m super glad to finally be back on the game, sharing new recipes with you all.

Now that I’ve told you all about my absence, let me tell you all about these gnocchi. Holy moly, are they awesome! First of all, they’re impossibly easy to put together, and they taste like something straight out of a fancy restaurant. But yes, girl, you can get them ready in 30 minutes in your tiny kitchen. How cool is that?

I went for shiitakes as the perfect ingredient to pair these gnocchi with. You know me and my obsession with all things shiitake, don’t ya? But yeah, if you don’t like them as much as I do, or simply cannot find them where you live, feel free to use any other kind of mushroom instead or even other ingredients such as broccoli, tofu or whatever floats that fancy boat of yours! The possibilities are endless!

The sauce is super duper easy to put together, but that doesn’t make it any less delicious, let me tell you. As you know, I’m a big, big lover of all Ecomil creams, and this cashew one is no different. Creamy, smooth, luscious and oh, so very delightful! I love how convenient it is, being able to pour cashew cream into your dishes from a tiny little carton instead of having to make your own. Plus all the Ecomil creams and milks are made from real ingredients, with no nasties added, so they’re one of the healthiest options you can buy. Does that sound great or what?

Creamy Garlic Cashew Shiitake Gnocchi


  • 300 grams gnocchi
  • 250 grams shiitake mushrooms
  • 1/2 a medium onion
  • 2 garlic cloves
  • 300 grams Ecomil cashew cream
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. ground rainbow pepper (black, red & white pepper)
  • 1 tbsp. extra virgin olive oil
  • salt to taste


  1. Cook gnocchi according to instructions on the packaging.
  2. Heat some oil in a pan and when it's warm, add minced garlic and onion, plus sliced shiitakes. Sautee until fragant and golden, for about 4-5 minutes.
  3. Now, add the cooked gnocchi and sautee for 3-4 minutes or until golden and crispy.
  4. Add in cashew cream and spices and let mixture simmer for 4-5 minutes or until creamy.
  5. Enjoy!
