Matcha Mint Protein Pancakes

Hello peeps!

If you enjoyed yesterday’s green extravaganza post (FYI: it’s pesto pasta and it’s very, very delish), I’ve got something that you’re going to adore as well – a sweet breakfast post full of goodness – matcha mint protein pancakes!

They’re soft, they’re fluffy and they’re wholesome to boot, packed with The Good Guru protein powder and some matcha powder to get all those anti-oxidants. How good does that sound? I personally love enjoying pancakes and other sweet goodies for breakfast, but given how busy my mornings are – with working out and going to work – you bet I need a filling breakfast which keeps me satisfied for hours. You know, so hangry me doesn’t attack her poor clients haha.

These matcha protein pancakes tick all the boxes for me.

They’re delicious, even if they look like salad in pancake form. Isn’t that shade of green super lovely though? They’re flavoured with matcha, vanilla and a slight hint of mint, which makes them so fresh and summery! Although I gotta say, they’re such a nice treat all year-round, not only summer… Care to join my pancakes all day everyday club?

They’re packed with fibre from the spelt flour and protein powder, so you bet they’re extra filling, although they don’t feel heavy at all. I’ve been using and loving this The Good Guru protein all year round. The flavour is mellow, yet it has a great berry vanilla touch with pairs well with any kind of sweet goodie, be it pancakes, muffins or smoothies. And the texture? So smooth too! No lumps that are hard to mix, no gritty texture… It really is the perfect powder to use everyday.

And last but not least: they’re pretty dang lovely, which is always a plus! Don’t you guys love pretty food? I’ve been having a thing for green lately, and eating my bodyweight in matcha, pesto and lettuce. If they ever make a movie about my life, it’s going to be called “50 shades of green”.

Anyway, if you want to take these darling green pancakes to a whole new level of beauty, pair them with some extra berries, coconut whipped cream and maybe a bit of agave and you’ve got yourself a winner breakfast. So, so good! And pretty to look at, too!

Matcha Mint Protein Pancakes

Matcha Mint Protein Pancakes


  • 1 cup (125g) spelt flour
  • 1/4 cup (30g) The Good Guru protein powder
  • 1 + 1/2 tbsp. matcha powder
  • 1/4 tsp. baking powder
  • 1/4 cup (55g) coconut sugar
  • 3/4 cup (180g) coconut milk
  • 1 flax egg
  • 1 drop peppermint extract
  • 1 drop vanilla extract


  1. In a bowl, whisk together all of the dry ingredients: flour, baking powder and protein powder.
  2. Add in the rest of ingredients and stir until batter is fully mixed.
  3. Heat some olive oil in a non-stick pan and when it's warm, add 3-4 dollops of batter and fry until bubbles appear on the surface. Keep heat on low-medium at all times, or else they will burn. When bubbles appear, flip pancakes and continue cooking until slightly golden.
  4. Serve with some whipped coconut yogurt or cream, and berries and enjoy!
