Chocolate Protein Pancakes + Peanut Butter Protein Bars

Long time no see, but university (and the most dreadful finals season) have kept me a very busy bee. However, I’ve been getting a lot of requests to upload the recipes for both these lovely chocolate pancakes and peanut butter vanilla protein bars ever since I first posted about them on my Instagram, so here they go!


If you follow me on Instagram, you’ll know that I’ve been crazy about going to the gym lately. Those spinning classes got me hooked, and I’m a big fan of HIIT as well. The drawback? I have such a packed schedule come this time of the year, with all university, work, finals, looking for a new place to live in, and now the gym, that I’m always on my feet. That means that I have to make sure that my caloric intake is enough to sustain such an active day and keep me sharp both mentally and physically. Cue: deliciously fluffy chocolate protein pancakes for breakfast and peanut butter protein bars as a post-workout snack!

The pancakes are the perfect thing to start your day off on a good note. They’re soft, chocolaty, fluffy and utterly delightful. From a nutritional standpoint, they’re truly wonderful as well. First of all, they’re made with spelt flour, so you’re getting that extra fibre! Next, we have some chocolate protein added, so it keeps you full for longer. Because who here likes those mid-morning sugar crashes? Not me! Then, there’s the fact that these are made with coconut sugar instead of its more refined counterparts, which contributes to the overall glycemic index of the pancakes being lower. In other words: these will keep you full for so long!

Now, onto the protein bars! I’m a true believer that you can get enough protein to sustain your day if you eat a healthy, balanced, wholesome diet. However, as long as it’s a good-quality blend, it doesn’t hurt to add some protein powder to your diet in the form of protein bars. I find these amazing to take to the gym with me and eat on my way back home after a workout. My gym is super far away from my place, so if I don’t pack some food to eat, there’s a high chance I will get suuuuper hungry before I get back home. Luckily, these bars are such a perfect thing to pack to avoid turning into a hangry monster. They’re also made with coconut sugar instead of processed white sugar, and they have some fibre and low glycemic index carbs added to aid glycogen restoration after your workout. A very balanced option overall!

The protein powder I used is by the brand California Gold Nutrition, and I gotta say it’s such a lovely one! The ingredients are simple, yet effective, and they come from organic agriculture. Besides pea and rice protein (which are amazing plant-based options), these blends have açai, monk fruit extract and pomegranate powder (for the chocolate version) and açai, monk fruit extract and sacha inchi for the vanilla version. Not only do these ingredients add a lovely flavour to the mix, but a vast array of health benefits as well, such as a higher antioxidant content. What’s not to love about it?

They can be used in recipes like these, such as pancakes, muffins, cakes and any other dessert which you want to jam-pack with quality protein. They’re also lovely as part of smoothies, milkshakes and  juices, since their flavour is not too overpowering, so they really pair well with fruits and vegetables. Overall, I do think they’re such a terrific option to look into if you’re after adding some extra protein to your plant-based diet.

Chocolate Protein Pancakes + Peanut Butter Protein Bars

Ingredients

Instructions

  1. For the pancakes:
  2. In a bowl, whisk together flour, baking powder, protein powder, cacao and sugar.
  3. Add milk, oil and flax egg and stir to combine.
  4. Heat some oil in a non-stick pan and add a dollop of batter per pancake when it's warm.
  5. When bubbles appear in the surface, flip pancakes and cook until golden.
  6. For the topping, melt together chocolte and coconut cream and top with berries!
  7. -
  8. For the protein bars:
  9. Whisk together peanut butter powder, protein powder, sugar and weetabix.
  10. Add in melted coconut oil.
  11. Line a small baking tray with parchment paper and press the mixture inside.
  12. For teh topping, melt chocolate and coconut cream and pour on top of the bars.
  13. Chill in the fridge for 6-8 hours and enjoy!
