Flax Almond Chia Pancakes + Faux White Nutella

Hello my loves!

Long time no see, but as you may know, I’m on my third year of uni for my food engineering degree, and things have been hectic lately. Lots of homework, deadlines, exams and (!!!!!!!!!!) hopefully the chance of moving to Dublin next year (which, involves lotssssss of paperwork and kinda prevents me from blogging much at all).

I wanted to stop by and share this recipe for pancakes (and what is possibly the best concoction to ever come out of my kitchen: this lovely faux vegan nutella) since it’s been highly requested ever since I posted about them on my Instagram. They’re fluffy, they’re thick and best of all: they’re impossibly wholesome. What’s not to love?

Paired with some warm vanilla coffee and a relaxing music playlist, this is surely a treat to make any Sunday morning feel lovely. I think I’ve already told you guys about Real Coffee coffee pods in previous posts.

They’re compatible with Nespresso machines, fair-trade and organic. Plus they have a huuuuge range of flavours to choose from, and the quality is just brilliant. I cannot recommend them enough! Moving back to the pancakes, the perfect companion for that mug of warm vanilla coffee and homemade almond milk. Now, can we really forget about that lovely hazelnut coconut cream? It’s such a perfect vegan replacement for traditional white nutella. Creamy, silky and very delightful! Best of all? It’s incredibly easy to make!!!

Flax Almond Chia Pancakes

Ingredients

  • 150 grams white whole wheat flour
  • 20 grams flax seeds
  • 10 grams chia seeds
  • 40 grams almond butter
  • 10 grams olive oil
  • 50 grams coconut sugar
  • 140 grams almond milk
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking powder
  • -
  • For the faux nutella:
  • 1 tbsp. hazelnut butter
  • 3 tbsp. coconut butter
  • 2 tbsp. white sugar

Instructions

  1. In a bowl, whisk together flour, chia and flax seeds, sugar and baking powder.
  2. Add in almond butter, milk, oil and vanilla and stir well to combine.
  3. Heat some olive oil in a non-stick pan and when it's hot, spoon some dollops of batter and cook on low-medium until bubbles appear in the surface.
  4. Flip the pancake and cook until golden.
  5. For the faux white nutella: whisk together sugar, coconut butter and hazelnut butter.
