Peanut Butter Chocolate Brownies + Homemade Cashew Oat Milk

I’ve been working with my friends over at Chufamix to help with the developement of their new Vegan Milker. Don’t you know what the Vegan Milker is? Because if you’re into making your own plant milks at home, you really, really, really (really) need it in your life 😉

Vegan Milker by Chufamix is a simple kitchen appliance which allows you to make milk at home in less than 5 minutes, using any ingredient combo you have on hand. Now, seriously!!! I’m super stoked to finally be able to share the Vegan Milker with you all. It’s going to change the way you make plant milks forever!! 

I made some homemade cashew oat vanilla milk with I used in these brownies. You guys wouldn’t believe how delicious it is! Much better than anything you can get from the supermarket, and better for you + the enviroment! Using the Chufamix is pretty straightforward, but I’m going to be publishing a videotutorial on my Instagram stories tomorrow (16/4/18 – but it’s going to be available forever in the highlights section, so don’t worry!) so you can see with your own eyes how darn easy it is.

Basically, all that you have to do is fill the jar of your Vegan Milker with water, add the cashews, oats, cinnamon, coconut sugar and vanilla to the filtering attachement and blend for 1-2 minutes. Then you squeeze the pulp with the mortar and voilà! You’ve got yourself a yummy plant milk (+ some leftover pulp that you can use to make cookies!!!!). Without further ado, let’s get into them brownies!

I’m not ashamed to confess that my diet has been 99% brownies lately. Am I complaining? No. Could I do with some extra vegetables? Probably. But look mum! These brownies are health-ish. As healthy as a little square of heaven can get. 

Lower in fat and sugar, and still packed with peanut butter flavour thanks to powdered peanut butter. AKA the stuff dreams are made of. AKA MY ONE TRUE LOVE. Do I have an unhealthy obesseion with it? Probably. Do I care? Not one bit.

As I was saying. These brownies. Holy moly, they’re everything I’ve ever wanted in a brownie: they’re soft, fudgy, with a melt-in-your-mouth texture and bursting with melty chocolate chips. Then there’s a chocolate coconut peanut butter frosting which, hold onto your seats, isn’t as high fat as you might be thinking right now.

I might have spent the last few weeks testing (and eating) lots of different recipes. Brownies all day every day? What a pain. Ah, the things I do for you guys! 😉

Now, I’m guessing you must be tired of hearing me ramble about homemade milks, brownies and whatnot, so let me shut up and leave you guys with the recipe:

Peanut Butter Chocolate Brownies with Homemade Cashew Milk

Ingredients

  • 250 grams white whole wheat flour
  • 35 grams cacao powder
  • 200 grams coconut sugar
  • 50 grams powdered peanut butter
  • 1 flax egg
  • 250 grams soy yogurt
  • 180 grams vanilla cashew oat milk
  • 50 grams olive oil
  • 15 grams baking powder
  • 1 tbsp. vanilla extract
  • a handful of chocolate chips
  • -
  • For the milk:
  • 80 grams rolled oats
  • 30 grams cashews
  • 1 vanilla bean
  • 25 grams coconut sugar
  • a pinch of cinnamon
  • -
  • For the frosting:
  • 100 grams coconut butter
  • 100 grams dark chocolate
  • 25 grams cacao powder
  • 25 grams powdered peanut butter
  • 2-3 tbsp. milk

Instructions

  1. To make the milk, use your Vegan Milker. Fill the filtering attachement with all of the ingredients and use a hand blender to blend for 1-2 minutes.
  2. De-attach the filtering extension from the jar and use the mortar to press the pulp and squeeze the last few droplets of milk from the pulp. Voilà! Milk is ready.
  3. To make the brownies, preheat oven to 200ºC (400F).
  4. In a bowl, whisk together flour, baking powder, cacao, powdered peanut butter and sugar.
  5. In a different bowl, stir together milk, olive oil, the flax egg, vanilla and yogurt.
  6. Add the dry ingredients to the wet bowl and stir to combine.
  7. Now, add the chocolate chips and stir again to combine.
  8. Bake for 40-45 minutes or until you insert a toothpick in the centre and it comes out clean.
  9. To make the frosting, melt together coocnut butter and chocolate.
  10. Then, add cacao and powdered peanut butter and stir to combine. If needed, feel free to add some milk or extra sugar. Enjoy!

    Oh my goodness, what an amazing project! I have seen and heard the DIY nut milk hype for WAY TOO LONG and I have to experience for myself whether or not making your own nut milk is worth it. I’m pretty sure it is, but depends on how well I make it! LOL! But anyways, these peanut butter chocolate brownies look heavenly! I bet the cashew oat milk is the secret ingredient that makes them special–oh yes, and I’d enjoy that cashew oat milk for other things too, such as hot chocolate and cereal! YES!
