Hello everyone! I’m super happy to be partnering with iHerb once again for today’s post. All opinions are, as always, my own.
Cupcakes! Who doesn’t like them? I know I’m mostly a savoury gal myself, but I cannot resist these little beauties when I see them looking all pretty, with their colourful frosting and rainbow sprinkles. Wouldn’t you like to grab one? (or seven *wink wink*).
The problem with cupcakes, is that more often than not, they’re made with not the healthiest ingredients out there. Loads of sugar, a ton of butter and who knows what else! Plus, they’re usually filled with gluten and dairy, so they’re not always suitable for those of you suffering from allergies. I’d been toying with the idea of creating some really wholesome cupcakes™, so when I saw these new ColorKitchen Vegan Food Coloring and Sprinkles, I knew I had to make them happen.
So here they are!
Gluten-free cupcakes which are also vegan, and with an all-natural frosting, since it doesn’t contain any artificial flavouring/colouring. I know, I know, I know: vegan + gluten-free cupcakes? No egg? No dairy? Minimum sugar?? They sound nothing like a good ol’ cupcake. Well, thing is: they’re just as good!!
The cupcake itself is fluffy and moist, even if there’s no gluten involved. Spiced with natural vanilla and laced with cinnamon, they’re a treat which everyone will adore. They’re also bursting with lots of mini-chocolate chips. Sweet, melty, delicious chocolate chips. What’s not to love?
Then we have the frosting. This is where the fun begins! So many colours, so many possible combinations!
Now, I will say: given that I’m a food engineering student, I’m usually wary of clearly artificial bright coloured foods… They don’t tend to include the nicest of ingredients, do they? So naturally (pun alert ha!), I got really, really excited when I first got in the kitchen with my new all-natural food colorings. I love using fun colours to decorate my food, that’s nothing new. But they don’t usually yield such amazing results. These ColorKitchen ones? They’re mind-blowing. Bright, vibrant, super intense AND they don’t taste weird at all. Plus they’re free of nasties and vegan, so they’re pretty inclusive. I love how you can get three different colours, which coincidentally are the three primary colours, so you can get to mix your own favourite colour. You can make purple frosting mixing the pink and the blue one; orange is made by combining pink and yellow and, if you put both blue and yellow together, you’ll get a lovely shade of green. Plus, depending on the amount of coloring you use, you will obtain different shades, so the possibilities are endless. I’m having so much fun experimenting with these!
These also come with a sachet of rainbow sprinkles, which are ideal to brighten up all kinds of desserts. I’m thinking of making some fun birthday-flavour pancakes next. Who’s in?
These are available online from iHerb, which if you read here often, you’ll know that I adore. The customer service is absolutely fantastic (available in 10 languages too), although I’ve never had any problem with them at all, since everything always turns out fine. But it’s great to know, isn’t it? They also carry a wide, wide range of products, +900 of which are vegan and, from a personal experience, often hard to get overseas. That’s why it feels amazing when they’re so easy to order through iHerb and they get here with no trouble at all. I can say nothing but wonderful things about my experience with them, but it’ll be nicer if you try ordering yourself.
To make this recipe, I’m also using some other ingredients I got from iHerb. Here are some mini reviews in case you had your eye on them:
Gluten Free All-Purpose Flour by Bob’s Red Mill: this is such a great mix to use when you’re getting into gluten-free baking. It’s reliable, easy to use (no need to mix your own formulas or add thickeners) and it makes the cupcakes turn out amazing.
Semi-Sweet Chocolate Mini Chips by Enjoy Life Foods: hands down the most adorable chocolate chips I’ve ever seen. They’re so dainty! They also taste fantastic, and are free from allergens, so they’re also suitable for inclusive baking.
Organic Ceylon Cinnamon by Simply Organic: I did not know how good cinnamon could be until I tried this. I mean: I loved cinnamon… But now I super love it. This is so aromatic and enticing that this jar is pretty pretty big, but I can see it not lasting longer at home 😉
Madagascar Pure Vanilla Extract by Simply Organic: again, this is super aromatic and a lovely, lovely addition to all kind of desserts. You only need a tiny drop to add a great punch of flavour to your baking, so the jar goes a long way!
100% Coconut Butter by Dastony: this was my first time trying coconut butter and I have to say it didn’t disappoint: this stuff is delicious! And it’s great for baking and making all kinds of sweet and savoury meals. I’m definitely impressed.
ColorKitchen Colors from Nature – PINK – BLUE – YELLOW – Frosting & Sprinkles: these are fantastic, as I’ve written earlier. Definitely my new go-to when it comes to adding colour to my desserts. I love how they’re all natural and wholesome!
I should leave you now so you can start making these lovely cupcakes. I bet you and everybody around you will go crazy for them!
