Gnocchi with Cheesy Basil Tomato Sauce and Veggie Sausage

Hello my friends!

Long time no see, but I’ve been buried under a gigantic pile of revision notes lately so I haven’t had much time at all to get into blogging. Good thing is that exams seem to be over, bad thing is that *erm* said gigantic pile of revision notes can be noew found scattered all over my bed so I’m probably sleeping on the floor tonight. Cleaning up the room, you say? Too much effort. Too much.

Why waste your last droplets of will to live trying to clean up the mess that your room is after a month of exams, when you can put that effort towards a much better goal? Enter: gnocchi with a delicious tomato cheese sauce and lots of veggie sausage bits.

Now, that’s something worth getting out of bed for, if you ask me. 

Tender pieces of gnocchi? Check! A creamy tomato sauce spiced with fresh basic and thickened with an obscene amount of vegan cheese? Checkity check. Tender bits of delicious veggie sausage? CHECK.

This is what comfort food looks like, and, you can fight me all that you want, but I doubt it gets any better than this. Now, you can decide whether you want to sleep in a clean, tidy place which doesn’t resemble a warzone (aka clean your room you nasty bean) orrrrrrrrrr get into the kitchen and whip a bowl of goodness.

Although if you’re anything like me *erm* yes, you should totally clean the kitchen first.

Gnocchi with Cheesy Basil Tomato Sauce and Veggie Sausage

Yield: 2 servings

Gnocchi with Cheesy Basil Tomato Sauce and Veggie Sausage


  • 150 grams gnocchi
  • 200 grams vegan sausage
  • 300 grams tomato sauce
  • 1 onion
  • 2 garlic cloves
  • a handful of fresh basil7
  • 1 tbsp. olive oil
  • 50 grams dairy free mozzarella (+ extra for topping)


  1. Boil gnocchi according to instructions on the package.
  2. Heat the oil in a saucepan and, when it's warm, add the minced onion and garlic.
  3. Sautee until golden and add the gnocchi and sausage, cut into pieces.
  4. Keep sauteeing until all of the ingredients are golden.
  5. Add the tomato paste, fresh basil cut into small pieces and cheese.
  6. Heat for 5 minutes and remove pan from the heat.
  7. Aditionally, you can transfer the gnocchi to an oven-safe dish, add some more cheese on top and bake (with the grill setting at 200ºC or 400F) for 5-10 minutes or until golden and crispy.
