Peanut Butter Chocolate Protein Mugcake

Post in collaboration with Foodspring. All opinions are, as always, my own. #foodspring #foodspringfamily

Happy Monday you pals! There’s no better way to start the week off right than with cake.

Okay, maybe with some cake and coffee aka my dream combo. Can anyone get me some espresso pretty please with a dollop of coconut whipped cream on top?

You guys. You guys. YOU GUYS.

I made cake.

In a mug.

In 5 minutes.

With very healthy ingredients.

All of which come from plants so this “cake” might or might not be actually salad. Did I hear cake 24/7? Now, that’s the stuff I do like.

You guys. You guys. YOU GUYS.

Please don’t close this tab just yet and let me tell you about the goodness that this mugcake is.

First of all, it’s completely vegan (aka made from plants aka salad) BUT that does not mean that this beauty here isn’t as delicious as its dairy and egg filled counterparts. Nope, nope, nope. This mugcake is everything you’ve always wanted your chocolate cake to be: moist (heh), soft, mega-chocolaty and super delicious.

Plus, as I mentioned before, this one is made with natural ingredients so it makes a very nutritious snack. I teamed up with the folks over at Foodspring and I’m using three of their products to take this mugcake to the next level.

Their natural peanut butter I find AMAZING. It’s made from ground peanuts only and it’s basically heaven in spoonful form. No artificial junk, no nasties, no problem. It adds the loveliest hint of peanut to this cake, and some healthy fats and protein as well!

Then we have some coconut oil, essential to keep things soft and moist (okay I get it, we hate that word, but how can one describe good cake otherwise?) and also fabulous when it comes to add even more healthy fats to keep you happy and satisfied for hours.

Last but not least there’s some vanilla protein! Yeah babe, this is one treat that will keep you far from your hangry state for hours. I gotta confess that I’m not the biggest fan of most protein powders out there (they taste like cardboard 99% of the time), but this vanilla one by Foodspring is one I truly love. Awesome flavour and it doesn’t make me feel sluggish like other powders do. Like, if I was to make a protein powder ranking, this one would definitely make it to the top 3.

Now that we’ve talked about how awesome this mugcake is, we’ve got 2 options:

a) I leave you so you can go do your thing (your thing = this cake) and send yourself to cake heaven.

b) I keep writing lame things as I usually do. Hey have I told you how well freshly coconut whipped cream and raspberries go with it??????? DREAM COMBO RIGHT HERE.

So yeah, you really, really, really need to give this one a go. Will you regret it? No. Although if you use a mug that’s too small, you totally will.

(Picture cake batter spilling everywhere inside your poor microwave and yourself running around the kitchen, trying to stop that huge mess and cursing my name)

Get yourself a big mug, for the love of all that’s sacred. And add some berries as well. Then thank me later 😉

I used to be obsessed with mugcakes! Nowadays, I kind of prefer actual cakes that I could just eat entirely in one sitting. Ideally, I should have smaller cakes like these though! I need to try a few really good recipes to rekindle my love for them!
