Maca Cinnamon Apple Muffins

Hello everyone! 

Are you guys looking forward to school/uni?? I never thought I’d be saying this but I kinda miss going to class!!! I know I’m so going to regret it once we’re two weeks into exams and (not)chill, but for now, I do miss the dynamics of learning and my university mates.

What does that have to do with muffins, you may ask? Nothing really, but these lil beauties seem like the best way to move from summer cooking and ease into autumn baking. Spiced with the goodness of both cinnamon & maca (aka yor new favourite combo) and featuring grated apple to:


1) Amp up those autumn vibes. I’m so living for the season of warm beverages, fuzzier sweaters and alllllll those apples (which I technically hate, although apple baked goods are MY FAVE)

2) Cut down of sugar & fat while keeping these muffins moist (heh that word) and very delicious.

Adding maca to your baked goods is also a great, great way to make them more nutritious. In case you don’t know what maca is, because maybe you’ve been living under a pineapple under the sea for the past year, let me explain it to you:

Maca is an ancient root with fantastic medicinal properties such as aiding in the healing of fertility issues. It’s also a great substitute for coffee for those of you who can’t deal with the caffeine crashes, as maca provides a lot of energy which is slowly released thorought the day.

Also, it tastes like caramel (yay) and it makes the perfect addition to pretty much every sweet recipe out there 😉

Mine is by Monday Superfoods, which I love a lot lot lot. Some versions can taste a bit like *dirt*, very earthy and stuff, but not the vibe I’m going for, you know. Whereas Monday Superfoods’ version has a lovely mellow flavour which I personally adore (100% dirt free, my friend). Maca Cinnamon Apple Muffins

Ingredients

  • 150 grams spelt flour
  • 120 grams coconut sugar
  • 40 grams Monday Superfoods maca
  • 1 Orgran egg
  • 150 grams soy milk (any other milk will do)
  • 1 medium apple, grated
  • 20 grams coconut oil, melted
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tbsp. vanilla extract
  • 1 medium apple, sliced

Instructions

  1. Preheat oven to 200ºC (400F)
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon and maca.
  3. Stir in the "egg", milk, vanilla, melted coconut oil and grated apple and wishk to combine.
  4. Divide batter into 6 very well greased muffin cups.
  5. Top with apple slices.
  6. Bake at 200ºC for 20-25 minutes.
  7. Enjoy!

    Whoever wants to go back to school, raise your hand! *everyone raises their hands but ME* LOL just kidding! I am looking forward to college, but I really want another month of summer to truly reset everything! Anyhow, given that it’s almost fall, I cannot wait to enjoy pumpkin spice and apple pie EVERYTHING! They’re my favorite seasonal flavors! Oh ho ho, and these muffins look deliciously evil as always. They seduced me enough to try and reach from my computer screen…HEADFIRST!
