Almond Chia Oat Bake

Hello everyone!

I’m so very happy to bring you a recipe which will rock your breakfast world! If you like me love oatmeal bowls to the moon and back (they’re really great, aren’t they!), but sometimes get tired of having the same bowl of food over and over again: I’ve got something you will absolutely adore!


Oatmeal bake! Packed with the goodness of chia seeds, almonds and maca for a cool extra energy buzz in the morning. How fabulous does that sound?


Will you believe me if I told you that this does get even better?? I’m sure you won’t, but let me tell you about how delicious this chocolate drizzle is! Doesn’t dark chocolate make all things extra amazing?? I love that stuff. However, if you don’t happen to have any dark chocolate on hand, feel free to drizzle this bake with a bit of almond butter (ir your favourite kind of nut butter, really!), jam, maple syrup or any topping you can think of. Dunking a slice in some almond chia milk would work wonders as well!


Another thing I love about these oatmeal bake squares is how easy it is to take them with you anywhere! They make such a perfect work/class snack and they are a great addition to bento boxes and the like. I should note they keep well when stored in an air-tight container in the fridge, so you’ll have a deliciously nutritious snack ready to take with you at all times.

(As long as you keep making batches. You know, they don’t replace themselves automatically. Athough I wish they did, because turning on the oven in this heat is a nightmare)


Let me tell you about this new Ecomil almond chia milk! It’s so good, my friends. I do love traditional almond milk, but I gotta say that the addition of chia seeds makes it extra amazing. I’m so liking the added health benefits too. Chia seeds are so good for you! Plus this milk is free of nasty and most allergens (dairy, gluten, refined sugar, etc), so it’s a win win, really!

Almond Chia Oat Bake

Almond Chia Oat Bake


  • 180 grams rolled oats
  • 80 grams almond butter
  • 100 grams coconut sugar
  • 100 grams soy or coconut yogurt
  • 40 grams coconut oil
  • 120 grams Ecomil Almond Chia Drink
  • 15 grams chia seeds
  • 1 tbsp. vanilla extract
  • 1 tsp. baking powder
  • 50 grams extra dark chocolate


  1. Preheat oven to 180ºC (375F)
  2. Start by whisking in a bowl oats, baking powder, sugar and chia seeds.
  3. Stir in yogurt, melted coconut oil, almond butter, vanilla and milk.
  4. Line a small brownie pan with parchment paper.
  5. Pour batter in the pan.
  6. Bake for 35-40 minutes.
  7. Melt dark chocolate and drizzle on top. Enjoy!

    Dark chocolate pretty much is the answer to all problems. Aside from peanut butter, of course! 😉 Anyways, I really want to try making baked oatmeal again! It looks absolutely incredible! Seriously, I’ll be making baked oatmeal tomorrow!
