Hello my pals! Long time no see. Have you been well?
I myself spent last week at a music festival, which was nice because we all know how big of a fan of music festivals I am. Though, I gotta confess that I’d miss having actual healthy food (aka not bread and beer) and also warm showers. AND actual beds, because I like my naps on top of mattresses, not pile of rocks.
Plus, I’d be happy if I didn’t have to see another porta-potty in my life again.
But back to the question: how have you guys been! Are you up for a recipe which will completely change yur breakfast game? Because these cute lil’ parfaits are going to rock your world.
Creamy coconut caramel flavoured oats on the bottom, topped with fresh summer fruit and swirled with sweet açai berry smoothie. Does that sound phenomenal or what? I guess that if you wanted to take things to a new lwvel of deliciousness, you could add some granola too.
Holy moly is that great!!!!
Best part? These parfaits are actually super good for you, packed with lots of plant protein, healthy fats, vitamins and minerals. They also feature three of my all time favourite superfoods: chia, açai and mesquite, so you bet we’re talking real healthy here!
They’re extra creamy thanks to the addition of Ecomil coconut milk (which is also free of most allergens and nasty ingredients!) and soaked chia seeds. It’s like eating pudding for breakfast! Pudding topped with ice-cream! Can it get any better?
No it does not!
