Almond Cheesecake Cups with Berries

Who here is a fan of quick, easy desserts that you can put together in a few minutes yet they look SO fancy that it feels like you spent hours in the kitchen?

I am. I sure am.


In case you haven’t realised by now: I’m only lazy human being. Except when it’s time for a spinning class, then I’M A BEAST. If you think about it, it’s a good thing I like spinning as much as I like cheesecake, because my poor skinny jeans would hate me otherwise. ANYWAY. I’m lazy. VERY lazy. The sooner I can get my dessert the better. The lesser dishes I have to do, the happier I am.

Which brings us to the happiest day of your life, if you’re a tardy slob like me.

Today’s the day when you get the recipe for the easiest, tastiest cheesecake cups in the whole world. Which, also happen to be 100% vegan and quickly made gluten-free if you’d like. Can I please get a “FLIP YEAH!”


These cute little cups of heaven are made in 5 minutes in your blender. Then you simply get your frisge to do alllllllll the work and wake up to 4 fabulous single-serving cheesecakes.

Or a really, really big one. I won’t judge you either way.

Plus, you only need like 6 ingredients to make these. How cool is that?? 

For the cream cheeze, I recommend you use a brand that you know you actually like. Some of them can taste a bit too strong, and they would add a unpleasant flavour to the cheesecake. Better stick to what you know it works!!


To add the almond flavour, I used my favourite Ecomil almond cooking cream. It’s thick and velvety so it adds a lovely texture to the cheesecake mix, and the flavour couldn’t be any better! Also, it’s free of nasty ingredients and super good for you!

Regarding the crust, you can use either graham crackers plus a bit of sugar (make sure they’re vegan, as not all brands are), or your favourite cookies. Simply blend them with a bit of coconut oil and you’ll have a base that is to die for! You could also add some vanilla or cinnamon for some extra flavour.


And hey! If you’re feeling extra fancy, you could add some flavourings to the cheesecake filling as well! I’m guessing that cinnamon, orange rind or cacao powder would be a fabulous addition.

Almond Cheesecake Cups with Berries


  • 350 grams dairy free cream cheese
  • 200 mililitres almond cream
  • 60 grams coconut oil, melted
  • 120 grams panela sugar
  • 2 tsp. vanilla extract
  • 120 grams graham crackers or cookies
  • 1-2 tbsp. sugar (optional)
  • 40 grams coconut oil, melted


  1. Start by making the crust by processing the crackers with some sugar and melted coconut oil.
  2. Press mixture into the bottom of 4 small glasses and chill them while you prepare the filling.
  3. For the filling, blend cream cheese, almond cream, melted coconut oil, sugar and vanilla together until smooth.
  4. Distribute mixture between the cups.
  5. Chill overnight.
  6. Top with fresh berries or your favourite fruit right before serving!
