Almond Butter Coconut Whole Wheat Pancakes

In case anyone is curious, here’s a list of stuff which can take a morning from average to the most magical morning ever (oh, how I love dot lists)

  • A really, really lovely breakfast (preferably in bed just beacause!). Enter anything warm and toasty which you can pair with warm tea and a ton of nut butter.

  • Aka almond butter coconut whole wheat pancakes with a good drizzle of agave syrup and vanilla peanut almond butter. So soft, so warm, so delish!
  • A great slow playlist can make a morning under the blankets so.much.better! And a fast-paced, upbeat one goes perfect for those mornings when you have to prepare for uni (not my ideal morning but just putting this out there because everyone deserves a better morning, right?). A good soundtrack is everything!

  • Lots of water to keep yourself hydrated. This is very important and it makes a huge difference in energy levels, skin condition, digestions and overall happiness, since being dehydrated can make you feel blue and apathetic, so DRINK UP! Plain water is great, but you can add a couple of slices of lemon and some cucumber to make it even tastier. Hot beverages are lovely too – why not try some herbal tea?

  • A quick energising workout once you’re out of that comfy bed. It might seem tiring at first but it will make you feel SO amazing once you’ve got that heartbeat up, broken a sweat and enjoyed a cold shower. Life-changing! If you’re not into hardcore HIIT stuff, some yoga or light streching would be lovely as well. I mean, that’s what they say! I’m just awful at yoga and being flexible in general lol.

  • Have I mentioned pancakes?? Gosh, these are so soft and fluffy that it’s hard to believe they’re healthy. If you like me are a fan of really nutritious breakfasts (actually, I am a fan of anything involving the word “breakfast” but you get the idea) which keep you satisfied and filled with energy for hours, you’ll adore these!

They’re almond flavoured, with a hint of coconut and a slight vanilla flavour. Does that combo sound wonderful or what? Plus, even though there aren’t any eggs involved, these turn out fluffy and moist. Such a perfect canvas to top with lots of fruit for extra nutrition!

Which are your favourite pancake toppings? I’d have to go for the good ol’ drizzle of maple syrup (or agave if I’m feeling fancier), warmed berries and a bit of nut butter (usually plain peanut butter but hey, this almond peanut vanilla combo is SO good). Crushed almonds and banana slices are also on that list. Which are your go-to’s? I need me some inspiration!

In order to make your morning even better and spare you some suffering (because pancakes tend to burn so easily it’s not even funny!!), I’m going to share some tips and tricks with you. With another bullet dot list. Because I love those little dots. So much.

  • Non-stick pan!!! This is a must!!!! I got a pan which I only allow myself to use for pancakes and crêpes two years ago now and it’s been a game-changer. It’s impossible to get smooth, intact pacakes which won’t shatter in a million pieces (just like your dreams of enjoying a charming breakfast in bed) when using that 4-year-old pan which you use for pretty much everything and is ruined. So ruined. I can imagine that you don’t really feel like getting a new one since, hey, they’re expensive and you’re a very broke uni student (feelin’ u), but they’re the most important factor when it comes to getting the perfect pancake.

  • You wouldn’t need to use oil/butter/etc when using a non-stick pan, but greasing your pan is still great since it gets your pancakes to look golden and also adds a nice crispy touch which you’ll love. I prefer using some extra-virgin olive oil since it’s the healthiest option out there and also what I always have on hand, but coconut oil would yield lovely results as well.
  • Use a measuring cup (1/4 cup is a nice size) when pouring the batter in the pan, as it will make all the pancakes look similar.
  • Also, make sure that pan is hot as it gets. Then lower the heat to medium-high until you have to flip the first batch of pancakes. Flip them and then reduce the heat to medium and keep cooking the rest on medium heat (otherwise they tend to burn)

  • Keep an eye on them often. You’ll have time to browse Instagram when you’re back under the blanket.
  • Pancakes should be flipped once some bubbles appear on the uncooked surface of the pancake. Make sure there are more than 2-3 bubbles, but don’t let the pancake fill with bubbles as it’ll likely end up burnt.
  • You can keep the already-cooked pancakes in a plate covered with another plate to ensure they don’t go cold.

And those guys are my top tips to get great pancakes 90% of the time! Some recipes don’t work well, of course (avoid everything which is completely low fat plus eggless as you’ll get doughy, flour-y, gross-y pancakes. Eggless pancakes need some fat to work out well and get golden, so don’t skip it) but you should be alright with this one 😉

  1. 200 grams whole wheat flour
  2. 90 grams coconut sugar
  3. 40 grams ground flax seeds
  4. 270 grams almond milk
  5. 30 grams coconut oil
  6. 1/2 tsp. baking powder
  7. 55 grams almond butter
  8. 25 grams shredded coconut
  1. In a bowl, mix together melted coconut oil, melted almond butter, almond milk, coconut sugar and ground flax seeds.
  2. Grab another bowl and whisk flour, baking powder and shredded coconut together.
  3. Incorporate the dry ingredients into the wet ones and stit until mixture is smooth.
  4. Heat some coconut oil in a non-stick pan and when it's warm, add 1/4 cup of batter and cook on medium until bubbles appear in the surface.
  5. Flip pancake and cook until golden.
  6. Repeat proccess until there's no batter left.
  7. Enjoy warm with fresh fruit and your favourite toppings!
