Happy Tuesday everyone!
I’m going to keep it short and (naturally) sweet today, if you don’t mind. As you may know if you have stalked me on Instagram lately and listened to my endless whining: I’m dead busy with exams, assignments and lots of crying (yeah complaining and being bummed about exams takes time too, sadly) so I’m cutting down on the time I spend taking pictures, developing yummy recipes and being happy overall.
Just like Christmas is the season to eat cookies and be merry, January’s the season to suffer, cry about exams, get zero sleep, eat nothing but cereal straight from the box and then cry some more. What a wonderful time to be alive! If I could just travel in time to the beginning of February, I’d be one happy soul.
Sadly, seeing how awful physics exams usually turn out in my uni, I think we’re far far far way from discovering a new way of time teletransport. But a girl can dream, can she? Can you even dream if you’re not technically asleep? #sleepdeprived #plspushmeoffahillyhill
ANYWAY! Seeing that today’s physics exam didn’t go quite as bad as they usually do (but let’s be honest, it’s hard to do worse than 0/100), I thought I’d take some time off and do something I actually enjoy, before going back to the torture & desolation cave that is my study room. Case in point: smoothie bowls. Nothing is more fun than spending some time putting pretty fruit and stuff on top of a bowl and taking a picture. I mean yes, concerts and travelling are way more fun than smoothie bowls, but we’re talking about things you can get done under 20 minutes here.
I am, however, the first to admit that I do not like fruit all that much. It’s shocking because if you guys follow me on Instagram *shameless self promotion because I’m fab like that* you see that fruit is basically all I post. Truth is: I’m not a fan of fruit unless it comes in smoothie form and I can either drink it or eat it with a spoon, and I only tolerate eating whole fruit if it’s part of a smoothie bowl topping and even that way… I usually blend it before I can actually eat it. You’ll never ever ever catch me eating fruit that I don’t actually have to photograph.
Don’t judge me though – it’s hard to being a vegan blogger who doesn’t like fruit. What am I supposed to post? Bowls of potatoes only??? ??? HA
Feels good to get that off my chest, really. Everywhere I look around, there seems to be people raving about how yum fruit is and I’m like “brO which fruit are you actually buying like mine tastes like bitter defeat and misery???” HOW. I don’t know where you guys get your fruity goodies from but it’s certainly not the shops around my place.
Why am I telling you about all of this though? For starters, I wanted to make the post longer so I don’t have to go back to revising soon enough, and also, I wanted to bring out how delicious these white chocolate raspberry smoothie bowls are, that you can even enjoy them if you don’t like fruit!!!!
Fruit I can eat!!! Vitamins!!! !!! Nutrients!!!! Wholesomeness to add to my 99.9% cereal based exam season diet! How cool is that brO???
These berry based smoothie bowls are made with coconut cream and coconut milk powder to add that magic white chocolate touch. Pair them with extra fruit and some white chocolate if you fancy, and you have one blissful smoothie bowl! Mine is dairy free hazelnut white chocolate if you were wondering 😉
- 1 + 1/2 frozen bananas
- 1 cup frozen raspberries
- 350 mililitres light coconut cream
- 3 tbsp. coconut sugar
- 2 tbsp. coconut milk powder
- Blend all the ingredients together.
- Top with extra fruit, white chocolate and nuts/seeds and enjoy!
