Especially when they’re all saucy, juicy with crispy fried borders. And ohhhh, those toppings! Don’t get me started on all the topping options!!!!! Can veggie burgers get any more perfect?

I don’t think so! Certainly not this one, with all of its spiciness, the crunchy edges and all those Mexican-themed toppings. ¡SO BUENO MI AMIGO!

Creamy mashed avocado? Yes please!

Juicy tomatoes? Aw yeah!

Just when you thought rice and beans couldn’t get any better, duh.

Spicy BBQ Bean Burgers
Serves 4
A fun, delicious twist on rice and beans!

For the patties
  1. 1 can (400 grams) pinto beans
  2. 2 tsp. Tajin seasoning (or any other brand)
  3. 3 tbsp. BBQ sauce
  4. 1 tbsp. hot sauce
  5. 1 tbsp. olive oil
  6. 1/4 cup cooked white rice
  7. 1 flax egg
  8. 15 grams cornmeal
  1. 1 can of corn
  2. 1 tbsp. olive oil
  3. romaine lettuce
  4. sliced tomato
  5. spicy salsa
  6. avocado
  1. Heat some olive oil in a pan and sautee the beans (previously rinsed).
  2. Add in Tajin, both sauces and salt if using.
  3. Add in the cooked rice.
  4. Keep cooking until fragant.
  5. In a bowl (or blender) mash together the bean mixture, the flax egg and the cornmeal.
  6. Form into patties.
  7. Bake them at 200ºC for 25-30 minutes or until golden.
For the toppings
  1. Heat the olive oil and sautee the corn until crispy.
  2. Place all the toppings on top of the burger and enjoy!

    I love veggie burgers too! I’m guilty of enjoying the soy mock meat-based one, but hey, can’t find that smoky flavor anywhere else! Now I’d LOVE to try this recipe out too! Avocados with a veggie patty? Yes please!
