Hello buttercups! I’m finally home from the music fest which means I’m back to enjoying actually delicious, elaborated breakfast instead of the sad, lonely biscuit I’ve been having on my way to the concert compound for every day of the past week #camperstuggles
Anyway, sad lonely biscuit situation aside, I really, really had a nice time. An epic time if I may say so myself. I saw the most talented bands ever live (The Offspring anyone??), got to meet some of my favourite band members ever (and guess what, I even have pictures!!), caught a pick and ate my bodyweight in burgers and pizza from the vegan food stall. AND THE SPICY CHEESE EVEN MELTED (!!!!!!!!!!!).
Awesome as those burgers were (crispy perfection I’m telling you), I actually found myself hardcore missing rice & beans and fruit. Fear not because a couple of bowls of each have already been devoured, and my pantry is once again stocked with cans and cans of beans waiting to be spiced and DESTROYED. How can I love beans so much, I don’t know. Like, I absolutely hands down would choose beans over brownies anytime. Give me beanz or give me death m8.
But is this post about beans appretiation? Partially yes, because I live every day of my life thanking nature for actually creating beans and being grateful they exist. But on the other side, this should actually be a post on triple chocolate overnight oats so I’m actually going to shut my mouth about beans right now.
TRIPLE CHOCOLATE OVERNIGHT OATS M8S. How cool that does sound? Super spicy beans with an extra dose of tabasco sauce level cool, probably!
Honestly though. These? These are going to make breakfast time x2000000 times cooler than it already is. Imagine waking up to a jar of creamy chocolate pudding-like oatmeal topped with sinful-but-not-really chocolate ice-cream and then a dollop of velvety chocolate cream. And then berries because they’re tasty like that. Can life get any better? Actually yes, it can: make sure you’re getting yourself some rice & beans for lunch and a glorious vegan pizza for dinner and you’re golden. Boom! Straight to tastebud heaven. You can thank me later.
Best part of this is how easy it is to make. Just whisk, chill and enjoy. Simple as that! The ice-cream part might take a tiny weeny but longer but you can totally skip that if you’re in a rush and need a dessert, I mean, breakfast you can make in advance. The pudding part with the cream alone already make one heck of an epic meal. Make sure you don’t forget those fruits for an extra nutrition boost and get ready to conquer your day (or have a pretty epic snack to eat while you binge-watch some friends *wink wink*)
- 350 mililitres almond milk
- 60 grams rolled oats
- 40 grams chia seeds
- 20 grams almond butter
- 45 grams coconut sugar
- 10 grams cacao powder
- 2 frozen bananas
- 7 grams cacao powder
- 10-15 grams coconut sugar (optional)
- a splash of almond milk
- 70 grams coconut cream
- 30 grams coconut sugar
- 8 grams cacao powder
- The night before, whisk all of the ingredients for the oats part in a jar until combined.
- Chill overnight.
- To make the ice-cream, blend all the ingredients together until smooth.
- To make the cream, whisk all of the ingredients together until smooth.
- In order to assemble the parfaits, top the overnight oats with the banana ice-cream, a dollop of cream and some fresh fruit. Enjoy!
- The serving sizes are smaller than the one pictured, which is actually too big for one person alone. You know, styling problems 😉
