If you think about it, it’s such a shame that I come up with THE BEST snack ideas during summer aka when I cannot bring my delicious snacks to university with me to enjoy them there (and therefore not having to pack a bunch of bananas in the last minute even when I know that they’ll end up all mashed up under my sadly-so-expensive textbooks). Instead, I can be found laying pantless (that Spanish summer heat tho) on my bed, trying not to die from a heatstroke and devouring oat bars like it is my job.
Which kinda is #jobgoals.
Anyway! Either if you guys need a snack to munch on during busy, hair-pulling, hectic uni days or simply for those lovely, relaxed summer afternoons – these bars are so for you.
First of all, they are delicious. Like, who wants to even eat a snack which isn’t delicious? Isn’t that the whole point of this snacking thing, munching on yummy stuff all the time?
I get you, I get you. There’s this people who actually snack on stuff only because it’s the wholesome thing to do and well, you know, you’re supposed to be all healthy and pure and yadda yadda. But fear not, my health-seeking pals! These bars are also incredibly nutritious and packed with such nourishing ingredients. They’re also free from refined sugars, full of fiber and pretty high in plant protein as well. Which is always a win-win because it kinda means you should be having maple vanilla chocolate chip bars for breakfast and WHO CAN RESIST THAT not me.
Back to the delicious thing – have I already told you about the crunchiness, chewiness and overall texture perfection of these beauties? (“beauties” being used loosely here, because these pictures are so ugly I almost didn’t post these, but then I realised that might be considered a crime or something because these bars are just too good to hide from the world).
These bars won’t crumble and fall apart on you, just like some infamous granola bars around do, which means you can take them everywhere. Can I get a “yassssssssssss”?
They’re also motherfriggin’ studded with GIANT chocolate chips. So many of them. SO MANY. Safe to say I’m in heaven!!! Can you even imagine what is like to bit on a crunchy but chewy oat bar to find a melty chocolate chip (or more like twenty-two because, yes, I went crazy on the chips) filling your mouth with that delicious sweet flavour??
And the addition of nutmeg? Holy macaroni don’t get me started on that!!!!!!!!!!!! You’d think it wouldn’t make a difference, given that the bars are already jam-packed with the most delicious ingredients (maple vanilla anyone?), but hey – the flavour it adds? INSANE. Simply heart-breaking, mind-boggling insane. Just make sure that you add only a tiny pinch because the bars will taste like bechamel sauce otherwise.
And I wish I couldn’t go all “been there, done that” on you, but you know me and my loose hand when it comes to spices so.
Last but not least, I’d like to focus on the fact that these are so shamefully easy to make that you’ll kinda feel bad that you’re not whipping up a batch as we speak. Just mix, stir, pour and bake. And then hide in the darkest corner of your fridge so your family doesn’t see them and you get to eat the whole tray by yourself.
Did I really say that or just think it?
Anyway, that’s the story guys of how I got to eat an entire tray of maple vanilla chocolate oat bars by myself last week. If you could keep it entre nous, that would be fabulous.
- 250 grams rolled oats
- 20 grams chia seeds
- 30 grams ground flax
- 50 grams coconut sugar
- 90 grams shredded coconut
- 50 grams walnuts, chopped
- 20 grams cashews, chopped
- a pinch of sea salt
- a pinch of nutmeg
- 150 grams chocolate chips
- 110 grams coconut oil, melted
- 160 grams maple syrup
- 1 tbsp. vanilla extract
- Whisk together in a big bowl all of the dry ingredients (that'd be from the oats to the chocolate chips)
- Add in the liquid ingredients and stir to combine.
- Line a baking tray with parchment paper and spoon the mixture into it.
- Bake at 180ºC (375F) for 40-45 or until golden.
- The bars will harden up as they cool so don't eat them straight out of the oven.
- Any kind of nuts can be used.
