Papaya Vanilla Yogurt Chia Parfaits

Can you guys think of anything better than enjoying a papaya vanilla chia parfait soaking the sun by the sea, enjoying the light summer breeze?

World, meet Consuelo, the almost 20-year-old summer hating aficionado. Unless it’s finals season we’re talking about then I’m 101% team summer and devote all my days to whining about how much I hate spring (because spring = exam season = death).

You’d think I’d actually like summer since it means going back to having free time and not living in the library 24/7 but but buuuuuut I cannot deal with this infernal heat, having to meticulously plan my bike rides so I don’t die from a heat-stroke, not being able to use the oven to bake all the cookies in the world, and being a sweaty mess all the fruggin’ time.

Like pleeeeeaaaase. Can we get one of those English summers for once?? You might think I’m crazy but heck yes would I love to be able to walk outside without melting and wear cute summer dresses with a denim jacket on!!!!!

Good thing is that I’m totally fleeing the country in a month or so (and moving my butt up north in a week!) so as to escape this deadly summer we’ve been having. Ireland, North Ireland, England, Scotland and hopefully Wales (keep your fingers crossed that a large sum of money magically appears in my bank account so I can travel everywhere pls): I’m coming for you! I really can’t wait to visit all those supermarkets and not having to bathe myself in suncream all day errrrrr day.

I’m a special kind of weird I know I know I knowwwww. You guys come here to enjoy the heat, beaches and tapas yet I cannot stand the sight of any. Anyone feels like switching lives? Mine is full of brownie and cookie taste-tasting #justsaying.

Anyway! Since I’m thinking most of you are fans of these really cool summery treats, I thought I’d recommend you this absolutely fabulous (yes humbleness queen strikes again!!!) recipe. Not only is super easy to make, but also freakin’ delicious and good for you!

Fresh, juicy fruit? Check! Healthy fats in the form of chia seeds? Checkity check! Did anyone say creamy vanilla bean yogurt? You bet!!!!

These parfaits are the perfect snack to enjoy on one of those super hot summer days which people seem to be crazy about and I on the contrary despise. Though whether you care for the heat for not, this is creamy pudding we’re talking about so you’re totally in for a treat!

Just make sure you use a papaya which is perfectly ripe and good quality! I used to think I hated papayas (some of them taste like vomit and I hope you’ll admit that) until I was lucky enough to try the papayas from the Exotic Fruit Box. In case you guys don’t know what that is (which is very possible as Google Analytics tells me most of you aren’t Spanish), the Exotic Fruit Box is a box of organic fruit (shocker I know) which is carefully selected so it arrives perfectly ripe at your door and ready to enjoy. It’s also really cool that all the fruit is grown in the South of Spain as it prevents lots of the CO2 emissions associated with exported fruit. Check them out if you live in Europe I’d say! Best avocados and papayas I’ve ever tasted I’m telling you!

For the yogurt part, choose your favourite plant-based yogurt and you’re golden. I personally love the vanilla bean soya one but I’m pretty sure that things like coconut yogurt or almond-based ones work wonders as well.

And that’s it! Simple as that, you’ve got yourself such a pretty, elegant vegan dessert which can also double-duty as breakfast. Winning on life everyone!

Serves 2
A delicious and elegant vegan dessert or breakfast!

For the chia pudding
  1. 250 grams (1 cup) vanilla soy yogurt
  2. 120 mililiters (1/2 cup) almond milk
  3. 40 grams (1/4 cup) chia seeds
  4. 1-2 tbsp. coconut sugar (optional)
For the yogurt layer
  1. 125 grams (1/2 cup) vanilla soy yogurt
For the papaya mousse
  1. Half a medium papaya
  2. 250 grams (1 cup) vanilla soy yogurt
Topping
  1. Fresh berries
  2. Caramelised seeds
  3. Edible flowers
  4. Extra chia seeds
Instructions
  1. The night before, whisk together chia seeds, sugar, yogurt and milk and let this mixture chill overnight.
  2. Spoon mixture into two glasses and top with a layer of yogurt.
  3. Blend together papaya and yogurt and top the yogurt layer with this mixture.
  4. Top with extra fruit and seeds and enjoy chilled!
Notes
  1. Make sure that the papaya you're using is really ripe and sweet!
