Raspberry Pistachio Orange Chocolate Coffee Cake

I always have such a hard time trying to decide which is my favourite season of the year. All things considered, I guess I’d have to go for summer, seeing that it’s the only time of the year when I don’t actually have 2187138273 things to do (see: exams, exams and exams).

But thing is: I don’t dig the infernal heat. Cos I’m not a big fan of having to take a nap in a 45ºC enviroment while I sweat my soul off and fight the urges to drop dead. Actually it gets to 50ºC ( !!!! ) sometimes so yeah, I think we could say I’m not that keen on summer.

And by “sometimes” I mean “one lonely time” but you guys know I’m such a whiny soul so if I have a chance to tell people that it friggin’ gets to 50ºC in my town you bet I will complain to death. Old habits die hard, I guess.

Anyway, once you leave the extreme heat aside, I really like summer, with all of its free time to ride a bike (not that it’s a good idea given that you will literally melt if you try to ride during the day but then again I guess that I simply love to have things to complain about), take naps (and consequently almost die of a heatstrock, ie: another thing to whine about, yay!) and cook up a storm. And note I said “cook” and not “bake” because if you try to actually bake anything… surprise: you’ll probably die too!

Good thing about good ol’ dang summer is all those festivals you can attend and all that ice-cream you can devour. Also, gimme allllll the iced-drinks and summer produce and I’m sold.

If we could only get all that juicy, ripe summer produce and free time this time of the year… oh, that’d be the dream! See, I think that this very period of time we’re living now would have to be my favourite. Lovely weather which is not too hot, not too cold; crisp skies, flowers every-flippin’-where (+ all those gorgeous flowery dresses which shops start to carry), all the fab TV shows making a comeback (actually just GoT but why would you need anything else anyway?) and a mixture of both winter and summer produce available in the shops.

This, guys. THIS is the season to get both raspberries AND oranges at the same time and put them into a cake. What a time to be alive I’d say! Please do not, and I repeat, do not waste another second not making this beautiful piece of art (made by yours truly aka the humblest person on Earth ha ha ha) because if you have to wait until next year to make this you’re going to be truly sorry.

I mean, at least I would. Tell me I’m not the only one who gets super emotional about her cake please?

So, this is it guys, this is what makes spring almost my favourite time of the year. Because then we have to remember that spring = midterms = me wanting to throw myself off a very sharp cliff = not good, and it kinda loses its magic.

Same goes for beautiful, cold winter with its fuzzy blankets, warm pyjamas and endless mugs of hot beverages… it also happens to be a period jam-packed with finals therefore it also makes me want to check Google Maps to see what the nearest sharp cliff is.

And autumn, boy don’t get me started on Autumn!!!! Also a season of beautiful weather and finally being able to put on my precious skinny jeans after a summer of putting up with shorts I totally not like (#tallgirlprobs #uncoveredbuttalldayerrday #mumgettingmadatme #butitsjustabuttanyway). But then again there’s exam season and being back to uni and waking up early and a million things I despise so hey, guess what: autumn doesn’t seem to be my favourite season either!

Especially when it’s full of melty chocolate bits, juicy raspberries, crunchy pistachios, zesty orange and has the softest, moistest texture everrrrr. Boy, I cannot resist a good cake I’m telling you. And I’m 99% sure that once you have a bit of this beauty here, you won’t be able to resist it either.

Raspberry Pistachio Orange Chocolate Coffee Cake
Serves 12
A delicious, moist orange coffee cake with a lovely raspberry pistachio chocolate oat topping!

For the cake
  1. 250 grams all purpose flour
  2. 60 grams almond flour
  3. 5 grams ground flax seeds
  4. 180 grams coconut sugar
  5. 300 grams almond milk
  6. 75 grams olive oil
  7. 10 grams baking powder
  8. 2 tsp. vanilla extract
  9. zest from one orange
  10. 150 grams dark chocolate, chopped
  11. 125 grams fresh raspberries
  12. a handful of shelled pistachios
  13. 2 tbsp. rolled oats
For the syrup
  1. juice from 1-2 oranges
  2. 90 grams sugar
  3. 2 tsp. vanilla extract
For the cake
  1. Whisk together in a bowl flour, almond flour, sugar, baking powder, orange zest and flax seeds.
  2. Add milk, oil and vanilla and stir to combine.
  3. Add half of the chopped chocolate to the batter and stir to combine.
  4. Line a baking pan with parchment paper and pour the batter on it.
  5. Top with the remaning chocolate, raspberries, pistachios and oats.
  6. Bake for 40-45 minutes or until golden.
  7. Drizzle with the syrup and enjoy!
For the syrup
  1. Whisk together orange juice, sugar and vanilla extract and simmer on medium heat until thick.
Notes
  1. This keeps well for up to 5-6 days wrapped in tinfoil.
  2. You may use brown sugar instead.

    Looks so yummy! Unfortunately in Poland raspberries are super expensive rn, they get cheaper around July when there are no oranges 🙁

    This looks sooo SO goood. I can listen to all your complaints about heat because we have the same problem. It’s getting hotter and hotter and hotter. :s
