Hello everyone and welcome to another post prasing the marvelous little things that cute cakes like these are. This time, for a change, I’ve decided to turn it into a lovely mum’s appreciation post!
HAPPY MOTHER’S DAY Y’ALL!
Y’all meaning everyone but me and probably most of you since we don’t do Mothers Day today BUT if you thought I would not take advantage of an occasion to tell the world how cool my mum is AND eat allllll the little pies… well, I guess you don’t know me so well after all.
So yeah, here’s an appreciation post for great mums and coconutty little financiers, both of which will make you real happy! I’m keeping things short and (very very) sweet today since I have this big big and scary exam on Monday (oh, you thought I’d be able not to complain about uni for once?? Well, you’re wrong again!) and revision breaks are scarce.
But does that mean I love my mum (and cute little pies!) any less? HECK TO THE NOPE! It’s true we Spaniards celebrate Mothers day on May, but I want to make the most of every chance I get to celebrate my lovely mum.
Sweet, bright, kind, cheerful, smart and always willing to eat my failed attempts and cake and do my dishes, that’s my mum! She’ll also hear me ramble about my latest fictional characters crushes (Damon Salvatore being the latest one, I mean, have you seen that man????????????????) once all my friends have told me to shut up. Like, she’d sometimes help me stalk them too. A stalker mum? How cool is that? BET U JELLY.
Okay I probably shouldn’t have mentioned that last since since I’m feeling we might seem a dangerous duo with the stalking bit and everything. But oh is she fun! That woman deserve all the raspberry coconut financiers in the world and then some.
And I’m guessing all your mums are great too (GO MUMS!) so you should totally get them some pies are well! Sweet, dense, moist and superduperhypermegadelicious (what a mouthful huh!), I’m 200% sure your mum will love them. And if she doesn’t that means you’ll get double the pies youself.
I mean, it’s a win win situation either way!
Now, don’t forget to hug that adorable mum of yours and tell her that you love her to the moon and back. Or, if you’re like me and won’t be seeing your mum for weeks, make sure you text her a long appreciation post involving tons of pictures of bunnies doing adorable things. Because, who doesn’t love bunnies? They’re like the animal version of these pies:
Sweet, adorable but not delicious. Please don’t eat them bunnies! Eat raspberry coconut financiers instead or prepare to fight me.
That being said, happy mothers day to you all! It doesn’t matter where you are, it’s always a good day to tell someone how much they mean to you.
Now, hug your dad too because they too rock.
- 70 grams flour
- 70 grams almond flour
- 90 grams coconut oil, melted
- 1 flax egg
- 100 grams sugar
- 90 grams almond milk
- 1/8 tsp. baking powder
- 9 raspberries
- Add all the ingredients but the raspberries to a blender and pulse until mixture is smooth.
- Alternatively, if you don't have a blender, whisk all the dry ingredients together and then add the wet ones and stir until smooth.
- Pour mixture into shallow muffin cups (I used silicon, if you use anything different, frease them previously) and put a raspberry on top.
- Bake in a preheated oven at 180ºC (375F) for 15-20 minutes or until they look golden.
- Enjoy with freshly whipped coconut cream!
