Life doesn’t get any better than a potato which is crispy on the outside and melt-in-your-mouth soft on the inside. Oh wait, IT DOES! Top that beauty with some of my epic 20 minutes chilli and you’ve got yourself a killer meal. Healthy? Yes, go plants! Delicious? Oh well, potatoes are like the king of foods and then you’re adding a spicy chilli on top so if you think you can get away with not having the most delicious meal ever you’re wrong! Easy to make? YUP YUP! Lunch/Dinner in 30 minutes. Minimum dishes to wash. This is how we roll!
For real now. Aren’t potatoes the best thing which ever happened to humankind? Is there a way to make them and not get them to taste delicious? Mashed, fried, baked, steamed, boiled, microwaved, grilled… I love them all! And the fact that they’re so nutritious and filling makes them even more appetising!
It makes me so sad seeing people being scared of them. Like, no, potatoes are all nice and lovely. They won’t murder your family, they won’t rob a bank, they won’t kidnap your children, they won’t eat the leftovers you’re saving in the fridge… THEY AREN’T THAT MEAN.
They’re good, they amiable, they’re pleasant #stopthefearofpotatoes2016.
For real now, something that delicious should be part of your diet all day errrrr day. Go potatoes!
- Cook the chilli according to directions on the post.
- Cut the potatoes in half.
- Make some cuts on them so they cook faster.
- Drizzle with chili powder, salt, pepper and olive oil.
- Bake at 250ºC for 25-30 minutes or until golden on the outside and soft on the inside.
