Apple Vanilla Hand-Pies {and welcome to Earthly Taste!}

Hello pals! I couldn’t feel any more excited that I am right now introducing you to this new site, Earthly Taste! I really hope you guys like the new name and design as much as I do. As always, I’m a sucker for feedback so feel free to leave your comments below. You peeps now I’d send you all freshly made cookies if I could but you know, awfully expensive shipping costs and customs exist.

Why did I decide to change my name, you may ask.

First of all, it truly bugged me that I wasn’t able to get the www.honeyandfigs.com domain. Let’s be honest, www.honeyandfigskitchen.com doesn’t have the same nice ring to it, but 16-year-old me knew no better and couldn’t find a better option. Furthermore, I didn’t own the @honeyandfigs Instagram handle either, which was almost as annoying as running out of hummus while you still have some carrots left to dip. And yes, I’m aware that Honey & Figs kitchen still appears on the search bar, but my web developer and I wanted to wait for a couple of months longer until we make the full switch. SEO stuff making me cray cray ah.

Secondly, as many of you will know if you follow me on Instagram, I recently made the switch to full vegan after more than 1 year vegetarian and I stopped consuming honey altogether, so, then again, my blog name felt weird.

I know those might not seem great reasons to many, but I was truly in love with this new Earthly Taste url, and all the possibilities it has to offer, so fingers crossed this turns out alright for the bloggy. Thanks pals for your support throughout these years!!!!!! (again wishing that shipping costs didn’t exist so I could send you cookies).

Let’s talk hand pies now. Whoever chose going vegan and eating more hand pies in 2016 as their new year resolution, fear not – I’ve got you covered! These epic apple vanilla hand pies are all your need to make this year happier. Like, why would anyone choose slaving away at the gym and eating nothing but celery as their resolutions when you can have hand pies??? WHO. Yeah, not me. This year all I’m doing is eating more cake aaaaaand maybe spending less at Topshop and getting better marks at physics if you push me. But mainly the cake thing.

If I start telling you about a sweet, juicy vanilla apple filling covered by the flakiest, crunchiest crust ever and you don’t think it’s the most legendary thing you’ve ever heard in your life… I’ll either think you’re bananas or think you’re bananas. There’s no inbetween here: these hand pies are epic and shame on you for thinking otherwise.

It all starts with this very delicious apple compote. Not that you can’t use pears or maybe persimmons if you prefer them, but you know that anything apple pie like gets my heart racing with excitement. Also, vanilla is like pure magic dust in spice form, so it’s not as if you could wrong with it either. What else? Did I hear coconut sugar aka the king of all sweeteners?????? I did. And let me tell you how much of a boss combo this is.

Then we have the most wonderful pastry ever. Yes, this is another severe case of me tooting my own horn but what else did you expect? I’m the queen of tooting her own horn and maybe the queen of naps and procrastinating too.

Pastry <- let’s get to this. It’s flakey, buttery without the actual butter and melt-in-your-mouth delicious. Bonus points it’s also really easy to put together because know you I’m super lazy and won’t spend the time I could be napping kneading and rolling instead #priorities.

Put both together and you’ve got yourself the queen of hand pies. These pastries are so good that if they ever make a movie about them, I know I’d like Meryl Streep to play them.

I’d so watch it.

Apple Vanilla Hand-Pies
Yields 20
These apple vanilla hand pies are incredibly delicious and even vegan too!

For the crust
  1. 2 + 1/2 cups (320 g) whole wheat pastry flour
  2. 1/4 tsp. sea salt
  3. 1 cup (225 g) vegan butter
  4. 2-3 tablespoons cold water
For the filling
  1. 3 apples, peeled and cut into small chunks
  2. 2 tbsp. vegan butter
  3. 1/4 cup (60 grams) coconut sugar
  4. seeds from 2 vanilla beans
  5. a pinch of salt
For the glaze
  1. 3 tbsp. vegan butter
  2. 3 tbsp. coconut sugar
For the filling
  1. Heat the vegan butter in a saucepan.
  2. Add in the apple chunks when it's warm.
  3. Dust with the sugar and vanilla and stir to mix in.
  4. Cook for 10-15 minutes on low until apples are golden and soft.
  5. Let this mixture chill for 2-3 hours.
For the pastry
  1. Whisk together flour and salt in a bowl.
  2. Pour in melted butter and stir to combine.
  3. Add water 1 tablespoon at a time, kneading the dough with your fingertips just until it comes together. Make sure you don't add all the water at once because you might not need it all.
  4. Roll the dough into a ball and chill for 30-45 minutes.
To make the pastries
  1. Roll out dough until you have a thin rectangle (you might flour your surface or use parchment paper so it's easier).
  2. Cut circles with a cookie cutter.
  3. Strain the syrup out of the apple mixture and place 1 tbsp. of the mixture on top of each dough circle.
  4. Close the pastries and crimp the edges with a fork to make them look prettier.
  5. Place pastries in a baking tray lined with parchment paper.
  6. To make the glaze, melt together vegan butter and sugar and brush the hand pies with this mixture.
  7. Bake the pastries at 375F (150ΒΊC) for 20-25 minutes or until golden.
Notes
  1. You can use pears or persimmons if you don't like apples!

    Hi Consuelo, this is my first comment on your blog even though I’m totally addicted to your recipes and Instagram feed ! Congrats on the new blog design, I love it, especially the Earthly taste logo ! So cute πŸ™‚
    I’m soooo gonna try this recipe, it looks too good ! I’m probably going to sub the vegan butter for coconut oil though, as I don’t cook with vegan butter and I don’t mind the coconutty flavor. I’ll tell you if it works !

    Oh, Consuelo! I’m so excited for you! I adore the new name and logo, and I can see why it makes sense for you, for so many reasons! It’s such a huge process, making a change like this (we’ve been facing some difficult little changes over at my blog, as well, and it’s tough, isn’t it?) – plus, I can’t even imagine all the SEO difficulties you mentioned!
