
Lemon Ginger Spiced Porridge
Nothing makes me happier than the thought of spending a Sunday afternoon laying on my bed, cozying up between duvets and blankets wearing my pyjamas (which might or might not have the cutest sheep pattern tee hee heee) and sipping on warm lemon ginger tea while I devour a bowl of creamy porridge the size of my head.
Could it get any better? Sure, play some R.E.M on the background and add a pair of fuzzy socks to the mixture.
But could it be even better? (< if you read that in Chandler’s voice then we’ve automatically become best friends so prepare yourself to having to spend hours and hours with me drinking coffee, eating cookies and crying over Game of Thrones or whichever show we’re obsessing with)
Yep.
It so could be better.
ABOLISH PHYSICS EXAMS and let me live my live alone and procrastinate without having to worry about tomorrow’s exam which, once taken, will likely have me crying as though I had just seen the last Game of Thrones chapter #allthetears.
Seriously guys, I’m trying not to be all whiny and stuff lately but… exams every Monday until Christmas? Who had such awful idea? IS THAT YOU GEORGE R. R. MARTIN TRYING TO KILL US ALL?
Now I cannot afford to devote my weekends to laying in bed watching Friends and muching on popcorn, porridge and tea doing nothing because of all the exams but I’m trying to look into the positive side and be happy for all of you who can, so here you guys have pretty much the best porridge recipe everrrrrr.

Seriously though. This porridge? A true life-changer. Impossibly creamy, sweet like caramel, warm and comforting and spiced with the goodness of lemon peel, ginger and a bit of cinnamon.
Could it be any better? (< if you read that in Chandler’s voice again, my blanket and I are now on the way to your place to spend the day binge-watching Friends)
Add some lemon ginger tea on the side and you’re set!
I recently tried this one by Fruiteatox, and I have to say that I couldn’t be any more in love with its taste. Lemon and ginger anything make my heart beat with joy and happiness and all things awesome!
I’m not a fan of weightloss teas since, well, a plantbased diet including tons of nutrients and wholefoods paired with regular sleep does alllll the work for you. However, I’m really liking that this tea focuses on boosting your inmune system when cold weather arrives. Gingseng, lemon and ginger make a pretty great job helping you kick off those nasty cold symptons for good so it’s quickly became a favourite in my tea cupboard when I start feeling ill.
Tons of water + sleep + rest + fresh fruit + lemon ginger tea? Best way to beat a cold without having to go for the meds! Remember to try more natural remedies whenever you’re feeling sick. Your body will thank you for it!
And don’t forget to get lots of wholesome food in, too! Especially when it’s as warm as comforting as beautiful porridge!
- 300 grams cashew milk
- 50 grams rolled oats
- peel of 1/2 lemon
- small chunk of ginger, peeled
- 1/2 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 2 tbsp. maple syrup
- a pinch of salt
- Heat the milk on a saucepan and add the rolled oats once it boils.
- Add in the spices and maple syrup and stir to combine.
- Cook on low-medium for 5-8 minutes depending on desired consistency. Keep stirring so it doesn't burn and stick to the bottom.
- Serve warm with some fruit, muesli and extra syrup if desired.
