Spicy Peanut Chili Soba Noodles with Vegetables and Tofu

Have you ever arrived home after having spent a whole morning in uni, desperate and hungry, so ravenous that you feel like you could eat all your plants (including that lovely new one in the white clay pot which is so cute it almost makes you feel bad that you actually want to eat the plant) and even the door handle, chairs, tables and pretty much all furniture in sight?

That’s me every Friday. 2:00pm lectures after a night out? No bueno. Arriving home starving and hungover? No bueno x2. Finding out there’s virtually no food in the fridge because drunk you is a jerk and decided to eat all the goodies at 4am last night? So no bueno I actually can’t find a number big enough to express my desmay.

Arriving home to a tupperware full of cold noodles in a sweet and spicy peanut sauce, jam-packed with veggies and tofu bits, on the other side? Priceless.

Unless drunk you also attempted to eat those after a wild night out… then I’m sorry for you but you’ll have to arrive home at 2:30pm and proceed to make yourself a PB&J (aka the uni student saviour) while you dream of punching that big of a nitwit that drunk you is.

And for the record, my definition of a “”””””””””””””wild night out”””””””” involves drinking two mere beers and feeling like I’ve just drunk 402 gallons of the stuff (for a 5’10” girl I’m so much of a lightweight it’s not even funny but hey, my nights out are so cheap!!!!) and then proceed to talk to everyone around me about how much I love making nicecream out of bananas. This usually involves showing the poor soul who had to bear with me during the night a pic of my huge collection of bananas.

Doing college nightlife right? I think so.

But, great as they are, this isn’t a post about bananas (though if you peeps like them as much as I do you can always check out this post and thank me later) but about pretty much the best plate of noodles you’ll ever make.

Healthy, easy to make and you can prepare them ahead of time so you always have something to eat when you come home from class. Win, win, win!

Spicy Chili Peanut Soba Noodles
Serves 4
Soba noodles covered in a sweet & spicy peanut chili sauce. The tofu and vegetable bits are so good too!

For the sauce
  1. 100 grams peanut butter
  2. 80 grams tamari sauce
  3. 55 grams agave syrup
  4. 40 grams water
  5. a dash of sriracha
  6. a dash of garlic powder
  7. a dash of ground ginger
  8. salt and pepper, to taste
For the noodles
  1. 300 grams soba noodles
  2. 250 grams smoked tofu
  3. 1 red bell pepper
  4. 1 large carrot
  5. 1 medium zucchini
  6. 1 medium eggplant
  7. 1 tsp. sesame oil
  8. a handful of crushed peanuts
  9. fresh cilantro to garnish
  10. a drizzle of lime juice
Instructions
  1. Start by making the sauce by combining all the sauce ingredients in a bowl and whisking until smooth.
  2. Cook the soba noodles according to the packcage instructions and set aside.
  3. Heat some sesame oil in a pan and when it's warm, add all the sliced veggies and tofu cubes.
  4. Cook until golden.
  5. Add in the noodles and stir to combine.
  6. Stir in the peanut sauce and cook for 2-3 minutes longer.
  7. Garnish with cilantro, crushed peanuts and lime juice once done.
  8. Enjoy hot or cold!
Notes
  1. Any kind of oil or veggie combo can be used.
  2. If you use plain tofu, make sure it's extra firm and it's been marinated in tamari for at least a couple of hours.

    Oh Consuelo, you party animal! I bet you needed this delicious peanut soba! I love peanut buckwheat soba noodles because they’re indulgent but so nutritious with complex carbs and healthy fats! The vegetables and tofu really complement the peanut sauce as well!

    I love the idea of spicy mixed with nutty flavors! Looks like the perfect vegan/vegetarian dinner to me!
