Who here wants to have ice-cream for breakfast every day of the week? Put your hands up if you do.
See me put both of my hands up in the air, as well as my feet. See me fall down the floor promptly. Boy, was that an uncomfortable position.
Now, son, if you didn’t put your hands up… get out of here.
Or not. Better yet: stay with me. We can become friends! Picture us together, going to the ice-cream parlour on a sunny summer afternoon and getting one ice-cream cone each. Mine is obviously salted caramel and vanilla bean aka the most superior flavours. Now, onto the fun part: I get to eat your cone too since you don’t like ice-cream!!!! And I don’t look greedy or anything because the ice-cream man thought it was for you. How fab of a plan this is????
Note to self: make sure you eat the second cone when the ice-cream man isn’t looking or he might suspect. And note to self number two: make sure that your new best friend doesn’t order a pistachio ice-cream cone because that one tastes like tears and desolation and all the horrible things in the world.
See? I have real big plans for our friendship. We’ll be such great partners in crime! And it’s not as if I only wanted to take advantage of you, don’t you think so! Whenever you have a craving for… say… pepperoni pizza, you can tell the pizza guy that it was for me and eat my part since I really really really don’t like it.
Like, if you ever want to upset me, all that you have to do is lock me in a dark room and feed me nothing but pepperoni pizza and pistachio ice-cream. The only downside for you is that once that I’ve starved to death, I’m going to be like on of those annoying poltergeist and won’t ever leave you alone so… uh… learn your lesson and don’t go around locking me in dark rooms!
Unless there’s gotta be some salted caramel ice-cream, warm tea and OITNB chapters involved, then yes, lock me now and save me from all the stuDYING.
Here’s our key to happiness. Befriend me, share your ice-cream with me, don’t lock me in a dark room and get to eat my part of pepperoni pizza: everybody wins!
As long as I’m getting some veggie pizza while you eat yours because ain’t nobody got time to look at you eating pizza while I get no food!
Let’s go back to the ice-cream again. And for the record I still can’t wrap my head around the fact that you would refuse ice-cream for breakfast. What’s next? Refusing to get promoted? Saying no to have a dozen of lovely puppies and veggie sushi delivered at your door every night?
Boy, you are such a nutcase.
But you’re my special lil’ nutcase. ‘Cause you and me will get far together, eating salted caramel ice-cream cones like it was our job. We’re going to have so much fun!!!!
And by “we”, I mean “I” since you don’t like ice-cream but you get the idea since you’re my friend and support me no matter what.
Back to this ice-cream now! Funny that it’s called ice-cream when there’s no real cream involved. What’s it made of then???
BLENDED FROZEN BANANAS!
Have you pals ever tried the infamous nicecream (=ice cream made from frozen bananas)? Texture wise, it’s so similar to real ice-cream, and you can add pretty much anything to it to make it taste like your favourite flavour! Berries, chocolate, mint, orange, etc… all work really well, but being the salted caramel ice-cream aficionado that I am, you bet I had to go for a delicious caramel version with a creamy salted caramel swirl.
Heaven in my mouth I’m telling you!
And the best part is that this is made of fruits and other nutritious bits and bobs, which, you’ve guessed it, makes it ideal for a breakfast treat or anytime snack!
If you’re going to learn anything from this post, let it be:
1) Be my friend. There’s gotta be a whole lot of salted caramel ice-cream involved.
2) Hop on the banana ice-cream train. It is life-changing!!
- 3 large frozen bananas
- 2-3 medjool dates, pitted
- 2 tsp. maca powder
- 1-2 tbsp. coconut milk, optional
- 2 tbsp. coconut sugar
- 1 tsp. raw cacao powder
- a pinch of sea salt
- 1-2 tbsp. coconut milk
- Peel the bananas and chop them into small pieces. Freeze them overnight.
- Blend the bananas until smooth. You'll need to add some coconut milk (or your favourite vegetable milk, but coconut milk makes it taste more like caramel) if your blender isn't strong enough.
- Add in the maca and dates and process until smooth.
- To make the swirl, whisk together sugar, cacao and salt and add 1-2 tbsp. of coconut milk until it reaches desired consistency.
- Put the ice-cream in a bowl and swirl in the sauce you've just made.
- Top with extra fruit, granola, chocolate, nuts, coconut, etc...
- I use Organic Burst maca powder. In my opinion, it has the best flavour of all the brands I've tried and it's also really reasonably priced.
