I guess this is another of those times when I tell you to stop, drop everything you’re doing and move your booty to the kitchen so as to make a batch of nuggets.
How you guys still manage to get work done while reading my blog and having to hear me tell you to stop with your life and cook whatever thing I’m bringing you today, I don’t know.
Also, if you could share your productivity tips with me… that would be great.
Although now that I think about it, my procrastination game isn’t quite as strong as it used to be back in the good old times. All the TV shows I like (read: adore and pretty much spend my life away binge-watching and crying over the death of fictional characters with a beard) are gone. Season mid-break, you say? More like Consuelo’s life ruiner, I’d say. Time to call a spade a spade, HBO.
Anyhoo, now that all of my reasons to spend 15 hours lying in bed in my jammies, drinking tea and watching whichever show I’ve happened to fall in love with have disappeared, I’ve turned into quite a productive human being. I do my dishes, help with laundry, interact with other human beings (because apparently shouting “f*ck you Olly” at the screen doesn’t qualify as being social) and even cook food other than toast!! Enter these delicious faux “chicken” nuggets that you won’t be able to stop eating.
So. Darn. Addictive.
Now I devote my life to do nothing but munching on crispy nuggets of perfection. Levels of unproductiveness are still high (unless we’re counting trying to win the world’s nuggets devouring contest as a life goal), but they say change is the spice of life sooooooooo I guess this new procrastivity is a positive thing.
But do you know what’s a truly positive thing?? These vegan “chicken” nuggets. Oh boy, they’re the diggity bomb. Soft and tender on the inside and crispy on the outside, healthier than your average chicken nugget and this way you know what’s in them!
Flavor-wise, they do taste like chicken to me. But I cannot recall the last time I had any meat so I might not be one to trust here. Fear not, my friends: I made an effort not to devour them all myself and share them with my family for the sake of recipe developement purposes.
Mum concluded they do taste like your average chicken nugget. Maybe not like chicken, chicken but still the taste you’re going for, right?
Bro #1 and bro #2 said that even though you can tell these aren’t 100% similar to traditional chicken nuggets, they’re still delicious. And boy, that’s a lot to say coming from my veggie hater brothers!
My grandma had a taste of them and thought they were really good too. And you know, she’s the kind of person who freaks out when she sees the block of tofu in the fridge. Fun fact, she’ll only eat it because she thinks it’s cheese.
My father wasn’t quick enough to try these nuggets. I hope that gives you a hint on how delicious these are and how easily they disappear, whoops!
Make yourself a favour and do stop whatever you’re doing right now. Especially if it’s a Game of Thrones binge-watching session, because (lil’ spoiler here): it will ruin your life.
And your expectations in men.
But nuggets? Nuggets will make you feel beautiful things. They’re like a hug in crispy form. They’re like a lil’ delicious friend who will comfort you when you need it. The only thing they’ll ruin for you will be your expectations in future nuggets, but that’s a risk I will gladly take.
Who am I trying to fool? Don’t stop with the GoT chapters, simply add some nuggets to them. They will balance out all the evil and will make up for all those times you’ll cry yourself to sleep #teamnugget
- 160 grams textured soy
- 1 flax egg
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. garlic powder
- 1 tbsp. white wine
- 1/2 cup seasoned breadcrumbs
- 1/2 cup seasoned breadcrumbs
- 1/2 cup panko breadcrumbs
- 2 tbsp. olive oil for the pan
- Soak textured soy in water for at least 20-25 minutes or as long as the package says.
- Add textured soy, spices, the flax egg and wine to a food processor and pulse until ground and combined.
- Add breadcrumbs and pulse again to combine.
- Make balls out of the soy mix and shape them like nuggets.
- Roll each nugget in a mixture of breadcrumbs and panko breadcrumbs.
- Heat some olive oil in a pan and add the nuggets when it's warm. Fry them until golden.
- You might need to cover the pan for the center to cook properly.
- Enjoy warm or cold with bbq sauce, ketchup or your favourite condiment!
- To make a flax egg mix 3 tbsp. of water + 1 tbsp. ground flax seeds and let it sit for 5 minutes.
- You cannot skip the oil to make these or else they won't be as good. There's no need to deep-fry them, one tablespoon of olive oil in your pan is all that you'll need to fry 15 nuggets.
- I tried to bake these and they didn't turn out as good, so I wouldn't say it's a nice option.
- The sauce pictured is storebought bbq sauce.
- Feel free to use whichever seasonings you prefer when making the soy mixture. Smoked paprika, oregano, dill, basil... all work.
