Bring on all the wine, this girl is turning 18 today!
If you’re curious too know whether or not I’ve grown more mature with age, let me tell you that my breakfast involved half a kilo of sprinkles.
And my birthday candle is a Peppa Pig one.
Some things never change, I guess.
Though I still want all that wine – let’s get our priorities straight, ok?
You see, this was initially a post about salad. A mighty fine one if I may say so myself. But then I thought that salad wouldn’t be the most perfect thing to post on someone’s birthday, so I had to look trough my files to check if I could find something more birthday-like.
No cupcakes, no cake, no sprinkles NOTHING <<<<<< Eighteen and still failing to plan, oh wellllll.
At least I haven’t grown a beard yet.
Eerrr yes. Good thing I found these chocolate zucchini pancakes because they’re bomb! Super fudgy and chocolaty, you wouldn’t tell whether they’re breakfast or a really sinful dessert. But hey, they’re healthy!
They have veggies in them.
Veggies are salad.
Thus these pancakes are salad <<<<<< Makes perfect sense.
Do I hear pancakes for lunch?
As if enjoying a plate of warm fudgy pancakes the moment you wake up wasn’t enough, there’s this chocolate sauce involved as well. Which might or might not take the whole stack over the top and make you want to scream with joy because mmmhhh extra chocolate is always a good idea.
And so are triple chocolate sprinkles. Do I need to justify that addition anyway?
- 70 grams rolled oats
- 40 grams flour
- 25 grams cacao powder
- 1/4 tsp. baking powder
- 60 grams brown sugar
- 125 grams greek yogurt
- 20 grams olive oil
- 1 tbsp. vanilla extract
- 1 egg
- 1 cup grated zucchini, packed
- 1/2 tsp. liquid stevia
- Mix dry ingredients in a bowl.
- Stir in wet ones and combine with a wooden spoon until smooth.
- Cook on low heat on a greased pan until done.
- Enjoy warm
