Coconut Lovers Pancakes

There are two kinds of people in the world: those who like pancakes and those who sit on a throne of lies.

Let’s get serious here – if someone ever tells you they don’t like these little rounds of heaven, run away. Run as fast as you can to get off of their sight. They cannot be trusted, so don’t.

They’re lying.

But I will admit that when it comes to coconut, there are two different kinds of people in the world: those who utterly adore all things coconut-y and would give their everything for a stack of quadruple coconut deliciousness (aka yours truly could you tell?); AND those who cannot stand the smell, texture, flavor of the mere sight of a coconut (hint: my whole family. Guess who’s been eating coconut pancakes for days. Answer is on previous parenthesis)

So yeah, if you fall into the latter category, I’d say you close this tab and go take a nap. Or you could totally go do something productive, but we all know naps are better, don’t we?

Anyway, you coconut hater, get out of here – I don’t mean to be rude or anything… but there’s so much coconut involved that you might want to punch this stack in its pancake-y face.

((Pancake-y face. Totally a thing. Pardon my writing today, guys. It’s easy to guess who hasn’t taken her nap today))

P.S: coconut hater, come back on Friday because some new cool things will be happening there. Hint: they involve feta so they’re all the yum.

Now it’s time to talk to all of you coconut-loving souls. Hi, we should make a coconut appreciation party. You guys put the cake and the piña coladas – I’ll bring these pancakes.

Seriously, if coconut is your thing, you’re going to adore these. I should warn you that you might not want to eat something other than these for the rest of your life. Which, on the other side, is absolutely okay, because these are absolutely healthy.

Yesssssssssssss. Let’s bring on those piña coladas to celebrate that.

I mean, who doesn’t cheer to the existence of healthy coconut pancakes?

Not me, that’s for sure!

Let’s get back to the pancakes, because writing so much about piña coladas is actually making me crave one right now which sucks because I don’t think that there’s such thing as “3 pm happy hour”.

We should make it a thing.

Ok. Let’s focus. Coconut Pancakes, let’s talk about that.

Made with shredded coconut, coconut oil, coconut milk and coconut yogurt (and if you like to live on the edge you’re allowed to add coconut extract too!), you bet that these are going to be awesomesauce.

And they are indeed. Not only super delicious, but healthy as well. Which in my world means that they should be your breakfast, lunch and dinner. And maybe your post workout snack. Oh well hey they could be your pre workout noms too? I mean, you surely need some energy before exercising, and these pancakes are scientifically proven to make working out 101% better.

And I totally didn’t make up that fact.

What I was trying to say is that you guys should try these pancakes. You can even make the batter the night before and have breakfast ready in five minutes the morning after. It doesn’t get better than that!


Coconut Lovers Pancakes
Yields 8
If you like coconut, you're going to adore these quadruple coconut pancakes! Good thing they're super healthy!
Write a review
  1. 160 grams gluten free flour mix
  2. 35 grams rolled oats
  3. 6 grams baking powder
  4. 30 grams raw sugar
  5. 1 tsp. stevia
  6. 45 grams shredded coconut
  7. 150 grams coconut yogurt
  8. 200 grams coconut milk
  9. 2 tbsp. coconut oil
  10. 1 tsp. lemon juice (may sub vinegar)
To layer
  1. extra coconut yogurt
  2. strawberry compote/jam
To fry
  1. 1 tbsp. coconut oil
  1. Mix dry ingredients in a bowl.
  2. Add in wet ones and mix with a wooden spoon until batter comes together - it will be thick.
  3. Heat some coconut oil in a griddle or non-stick pan and when it's hot, drop 1/4 cup of batter and cook until bubbles appear on the surface.
  4. Flip pancakes carefully and cook until done.
  5. Layer with yogurt/strawberries if desired and enjoy warm!
  1. I don't like these pancakes cold, but they're pretty awesome reheated in a microwave. However, they taste better when freshly made!
  2. This recipe is vegan & gluten free.

    People who don’t like pancakes cannot be trusted at all. I feel the same way about people that don’t like bacon… I mean, even a lot of vegetarians like bacon haha. I have to admit, I’m not a big coconut fan, but these look incredible!! I may just need to try them… because I’ve never met a pancake I haven’t enjoyed!

    Ok, now wait a minute here. I don’t love pancakes. I can’t help it, I was born that way. I actually loathe what I call “restaurant pancakes” they’re so heavy and make you feel all sluggish and fat. Homemade pancakes are OK – I make them for my kids becuase they love them, but I’m good after one little dollar sized cake. However – I do so love coconut, so maybe this is my middle ground. . . . Maybe? Let me hang with the cool panccake lovers still – please? I’ll never say I don’t like pancakes again. At least never around the pancake loving crowd. . . . 🙂

    I adore coconut so am drooling on these with coconut milk, coconut yogurt (just so happened I picked up a container at the store yesterday) and coconut oil! All we need is some coconut butter to drizzle on top and some coconut water to wash everything down!

I can’t eat the entire stack like I used to or else I wouldn’t be able to fit into my skinny jeans any more but I sure as heck wish I could and that’s no lie:) Love how much coconut you jammed into these pancakes – they look and sound incredible!

Your writing is sooooo honest and hilarious I loveeeeee reading it! :* Sitting on a throne of lies hahaha I CANNOT GET OVER THAT! Now to these pancakes!!!!! I LOUUUUVEE goes into our veggies, curries, we mix it with spices and drink it as a cooler and even mix it with rice and have for dinner. What I have never done is transform the coconut goodness into these super fluffy and amazing looking pancakes! Oh my GOD!!!!! That deliciously browned surface of the pancakes is making me DROOOOOOL!     I’ve always love the flavor of coconut but until recently, I hated the texture of shredded coconut so I would NEVER eat anything with shredded coconut.     Hello there… I am new to the gluten free diary free and vegan cooking however just thought to make a comment that Oats are NOT gluten free!!! They contain gluten in plentiful amount, so carefully if anyone is on this diet for serious health reasons. Otherwise I am going to use this recipe simply just not gonna use them. 🙂
