I know they are.

You might not think that pancakes are the healthiest way to start off your morning. Yeah, look at the nutritional data again and tell me you don’t feel like crying with joy because pancakes for breakfast everyday is no longer an oxymoron.

Come round and we’ll cry together with joy, because I’ve been like that ever since these pancakes and I met. Which was like a week ago, and I’ve been all emotional over pancakes for that long… Although now that I think about it, it might be exams and homework which make me cry and not pancakes. You know, pancakes are cool guys and they never ever ever make people sad.

And I know that all kind of pancakes are beyond great. Actually, if you think about it, their name says it all – “pancake” means “awesomeness” in a language I just made up.

But seriously: these are the coolest ones in town. 

With 8 grams of protein and 5 grams fiber per pancake, these will leave you absolutely satisfied for hours. We’re talking about the most filling pancakes ever here, guys. Believe it or not, my serving size is one.

Oat Bran Protein Pancakes
Yields 8
Hands down to one of the healthiest beakfast you'll ever have - these pancakes ae incredible!

Ingredients
  1. 240 grams oat bran
  2. 240 grams fat-free greek yogurt
  3. 50 grams raw honey
  4. 2 eggs
  5. 1/4 teaspoon baking powder
  6. 1 teaspoon vanilla extract
  7. a pinch of cinnamon
  8. a pinch of stevia (to taste)
Instructions
  1. Whisk all of the ingredients in a bowl until combined.
  2. Heat some olive oil (or coconut oil) in a pan and when it's hot, spoon some batter there.
  3. Flatten and shape them with a rubber spatula if you wish.
  4. Cook until golden and serve with lots of fresh fruit and extra honey!
Notes
  1. If you don't add the extra stevia, pancakes are not very sweet.
  2. These freeze well and are so good when reheated in a toaster.
