Chocolate Chip Cookie Dough Pancakes

Who here likes cookie dough for breakfast?

(Time to picture me putting my hands up and all that jazz. I can never say no to cookies first thing in the morning!).



Though I know what you’re all thinking now

“Cookies? For breakfast? Are you right in your head, young lady? What about the sugar-rush afterwards? Have you heard about hunger pains? Terrible idea, indeed.”



Fear not. No more reaching for a candy bar because you’re hungry a minute later *guilty*. These pancakes are bound to leave you satisfied for hours!

HIgh fiber? Check. With lots of filling protein? Check. High in calcium and vitamins? Yes! And low in sugar? You bet!

Looks like we have a winner here.



May I mention that these can be made in less than 10 minutes start to finish? Yes, you read that right. You’re only a couple of minutes away from a high pile of warm cookie dough pancakes. Pancakes with are jam-packed with melty chocolate pockets and drenched in maple syrup. Should we add a bit of soft salted butter on top too? Yeah, we totally should. If it’s good, it’s probably twice better topped with some salted butter. Or peanut butter, I’ve tried that too and I can ensure it is a nice combo. Extra chocolate chips? Yes, please! Whatever you want to add, it’ll go perfect with these pancakes. Highly customizable, quick and healthy: now, this is what I call breakfast heaven!



Or dinner heaven if you prefer. Because the moment you try these, you’ll want them for breakfast, lunch and dinner every single day of your life. And hey, what’s the problem? As healthy as they are, it’s not that you should feel guilty about devouring the whole pile… it’s that you should feel bad about not eating them.




Chocolate Chip Cookie Dough Pancakes
Serves 4
Nothing better than a warm pile of cookie dough pancakes with melty chocolate pockets for breakfast. Bonus points that they're high super healthy too!

  1. 2 + 1/4 cup rolled oats
  2. 250 grams fat free cottage cheese
  3. 1/2 cup egg whites
  4. 2 + 1/2 tablespoons brown sugar
  5. 1/2 tablespoon vanilla extract
  6. 1/8 teaspoon baking powder
  7. 1/3 cup chocolate chips
  1. Add all of the ingredients (minus the chocolate chips) to a blender and pulse until combined.
  2. Lumps in the batter are ok. I actually like the pancakes better that way, since it adds some texture.
  3. Stir in chocolate chips.
  4. Melt some butter in a pan and when it's hot, drop about 1/4 cup batter and cook on medium heat 1 minute on each side or until golden.
  5. Serve warm with lots of maple syrup!
  1. Crushed weetabix work well if you don't have oats on hand.
  2. If you don't have a blender, you can mix by hand too.

    Oh geez. I want to eat these early and often. Seriously, they look incredible! Here’s a little annoying thing though: If you had to replace the cottage cheese with a non-dairy option….what would it be? Or would that ruin the pancakes?

    Awesome! Believe it or not, I actually made something very similar to this for breakfast this morning! I usually add half of a ripe banana, and use a whole egg instead of whites…but the basic idea is similar. And YES, they are awesome! Delicious and totally healthy!

    Hi I’m new to your blog (found on Instagram) and this caught my eye! I was wondering if there was a substitution for the cottage cheese that wouldn’t change the flavour? Greek yogurt possibly? Applesauce?

      I remember I tried to make these in the past using greek yogurt and I didn’t quite like the outcome 🙁 I don’t know about applesauce though.
      Ricotta is a good substitution anyway! xx
