Honey Chili Chicken Rice Lunch Bowls with Avocado Crema

Things are getting seriously dangerous around here. 

Both of my brothers went down with the flu.

So basically, walking around my house now feels like being on a war zone with germs flying by instead of bullets. I’ll be the next, I can feel it.

You guys, I hate, like really really dislike being ill. Catching that nasty flu would mean missing at least a week of studying, blogging, eating good food (it all tastes like garbage and it’s not as if I was able to taste it anyway), having to miss my beloved long runs, lose muscle tissue and obviously, feel crappy and dirty all. the. time.

Odd as it sounds, I actually know people who would love to spend some days lying in bed without having to move, do homework and washing their hair (seriously, the part where I feel so weak that I can’t get off the bed to wash my hair is my least favorite one!). But not me, guys. If I end up going down with the flu, I’ll make sure you’ll all hear me cry overseas.



Let’s say that my google search bar looks something like that now:

“Can I get the flu by looking at someone who is infected?”

“How can I prevent catching the flu from a family member?”

“How many squats do I have to do in order to get strong enough not to catch the flu?”

“Superfoods to eat not to catch the flu?”

“Is it ok to hide in my room and avoid all human contact until the flu is over this season? If so, can I go outside to get food?”

And so on. I’m really worried in case you can’t tell.

I think that mum is coming next. Don’t ask me why, but I can feel it. Female intuition, a sixth sense, whatever you name it, but mark my words: she will be the next one getting sick.

*Mum, if you’re reading this, go hide in your room to be safe. I’ll bring you food as soon as I can get myself one of those fancy gas masks*

Whatever. When she’s out of the game, I’ll be the one in charge of all the family meals which obviously means that will be having this Skillet Lasagna for dinner every single day of our lives (or until the break is over, yo) and this Honey Chili Salad Bowls for lunch.

Oh boy, they’re SO GOOD.

Calling all the sweet+salty+spicy lovers out there. This one’s for you! These salad bowls are perfection in lunch form. 

The moment I saw all those lovely lunch bowls all over Pinterest, I knew it was a bandwagon I had to jump on.



This one is easy and quick to make, yet it still tastes impressive enough to look like something you’d get in a fancy restaurant. There’s chicken glazed in honey+chili sauce, sautéed mushrooms and butternut squash, roasted cashews, salty feta, warm wild rice, lots of leafy greens and then the most delicious and vibrant avocado cream you’ll ever put into your mouth.

I saw that crema in lots of blog too, and obviously, I needed to follow that trend as well duh.

Too bad I want to slather that stuff on everything that gets on my way. Toast? Sure. Salads? Yup. Polenta? You betcha. My pillow? Yeah it will probably look a lot better with a layer of avocado cream.

You think I’m kidding here, but that cream is that good.

These bowls are definitely something that you need in your life like the air you breath. Or even more maybe, because, tell me,  does air even taste like honey+chili? No? You see now why  these salad bowls are better, right?


Honey Chili Chicken Rice Lunch Bowls with Avocado Crema
Serves 3
Sweet, salty and delicious, these lunch bowls look impressive but they're SO easy to make actually!

  1. 150 grams leafy greens
  2. 1 cup cooked wild rice
  3. 150 grams mushrooms
  4. 150 grams butternut squash
  5. 200 grams chicken breasts
  6. 1/8 cup roasted cashews
  7. 1/8 cup crumbled feta
  8. 1/4-1/2 teaspoon chili flakes
  9. 1 teaspoon raw honey
  10. 2 teaspoon olive oil (divided 1+1)
For the avocado crema
  1. 1/2 a small avocado
  2. 2 tablespoons fat free greek yogurt
  3. 1 teaspoon lime juice
  4. salt and pepper to taste
  1. Cook wild rice according to packcage directions.
  2. Heat 1 tsp oil in a sauce pan and sautee chicken (which has to be cut into strips) for 2-3 minutes or until no longer pink.
  3. Add chili powder and honey and sautee until golden.
  4. Remove chicken from pan and without washing it so it keeps the honey flavor, add cubed butternut squash and sliced mushrooms. Sautee until done.
  5. For the avocado crema, mash a ripe small avocado with a fork. Stir in lime juice and and yogurt and mix until combined.
  6. Mix all of the ingredients in a plate and enjoy!
  1. Lemon juice may be used instead of lime juice, but don't skip it altogether or else the crema turns brown.
  2. This recipe is gluten free.

    Fancy gas masks are all the rage right now! 😉 I hope you don’t get sick; I agree, the worst is not being able to fully taste food! And I despise not feeling like showering, even though I want to. Ug, one of the worst ever. But this salad – I think it qualifies as one of the best ever! Honey chili chicken? Oh my gosh. And avocado crema. Um, I just might get sick if you deliver these bowls of awesomeness.

    Down lots of vitamin C? And wear a face mask? My husband swears by lots of antibacterial hand stuff, but I’m not so sure. These lunch bowls look absolutely delish though! I love the pairings of spicy chili flakes and sweet honey. Maybe all those nutrients could ward off that icky flu…

    Oh no! I hate that feeling when you are just waiting to get sick 🙁 It’s so frustrating not being able to taste too, I usually eat loads of really crunchy stuff to get a bit of texture going on instead of taste! Avocado crema is a great find and this bowl looks very tasty – the cashews are a particularly good addition.

    I agree Consuelo! i hate getting sick!! my daughter just came down with the stomach bug last night and I am praying it doesn’t circulate through the rest of the family!!

    Seriously, STAY HEALTHY! I’ve heard the flu this year is ROUGH. Drink some tea with turmeric! THat should boost your immune system!! And eat ALL THE VEGGIES. 🙂

    Hoping you don’t get sick Consuelo! I’m a miserable sick person too. I always think it would be so nice to lay around in bed for a few days, but when I have to do it I am beyond miserable. Love the combination of ingredients in this rice bowl!

    Oh man, reading this while knowing you’ve already caught it was painful. I had the same kind of situation here- my older son brought it home and I was disinfecting everything in sight and making him wash his hands every 10 minutes, hoping it would go no further.
