Starbucks Copycat Double Chocolate Muffins

I really don’t mean to bore you with my problems, so I’m going to keep my complain short (but not sweet, blog problems are never sweet!) today. My blog is still not working for me. I contacted my host servers, my internet providers and no one would help me fix it up… I don’t understand what’s happening, and I just want the whole thing sorted out as soon as possible. (EDIT: I think I’ve fix it??)

Final exams + blog problems = this girl needs chocolate.

I need it like the air I breathe, I tell you. I’m so nervous right now that I’m living glued to my peanut butter jar. And stuffing my face with as much chocolate as I can… Which means that this is going to be a chocolate-filled week. No problem, you say? I knew it. When is too much chocolate a bad thing?



So prepare yourselves for a chocolate desserts avalanche, we’ll be be back to the salad when this whole nightmare is over.

In the meantime, let me have my muffins while I cry because of the blog issues.

These are certainly not the way to fix the technical stuff. I mean, I wish they were that magical, but besides being super chocolaty, fluffy and rich, they don’t have any other superpower. I guess that’ll have to do until someone comes up with a recipe for muffins which actually sort out all kind of bloggy problems… I’d totally buy them.



Which I won’t be buying soon will be Starbucks Muffins… homemade ones are 128743 times tastier. Not to mention cheaper and healthier!

I’ve got quite a lot of cake/muffins recipes in the blog (taking into account that I haven’t written a rather large amount of posts as for today!), but this is definitely my very favorite. And my family’s favorite one as well. I made a 24 muffins batch last time and they lasted like 24 hours at home! Crazy, huh? How could they dislike them though, when these are all that you can wish fo in a muffin: fluffy, moist, tender, rich, and studded with melty chocolate chips… They’re bound to make your days happier!



Now, confession time: I did not plan on posting these today, since I don’t like the photos at all. I messed up with my camera again and the white balance is just… umm… weird, yes. If anyone knows how to fix that problem, please let me know! Ok, like I was saying: I wasn’t going to share this recipe until I got decent pics, but mum said they were so good that I couldn’t keep them away from you. So here you have a recipe for the best muffins you’ll ever eat! Or at least the best ones I’ve ever eaten!



I hope you enjoy them!



230 grams flour

60 grams cacao powder

180 grams sugar 

1 tablespoon instant coffee granules (decaf will do)

a pinch of salt

1/8 teaspoon cinnamon

16 grams baking powder

2 large eggs

250 grams 2% greek yogurt

4 tablespoons buttermilk

75 grams light olive oil (or vegetable, for a milder taste)

150 grams chocolate chips



Whisk dry ingredients together.

Mix-in wet ingredients and stir to combine. You can use an electric whirewhisk, because there’s no risk to overwork the batter!

Toss 100 grams of chocolate chips.

Fill metal muffin cups until 3/4 full. Make sure that your muffin cups are rigid or they won’t grow tall!

Bake at 220ºC for 8 minutes, then lower the temperature to 180ºC and bake for 15-16 minutes more.

    There is a reason I’m scared to mess with any of my blog design, etc, even though I know I need it. You are doing great Consuelo! These muffins are proof. Everyone needs a good old basic chocolate muffin, but especially a double chocolate copycat one. Looks delicious!

    I’m glad you shared these! I love copycat recipes like this – and I could definitely also use some chocolate this week!! The technical blog stuff is the worst – I am always freaking out about one thing or another … mostly because I just don’t understand most of it!

    Yum, Chocolate makes everything better 😀 These muffins look delicious! You know that I am a huge fan of greek yogurt. I love that you used that and buttermilk in your recipe. These must be very moist!

As for the white balance, I just set my camera to automatic white balance and it usually works, but if not I adjust the temperature on PicMonkey. For what it’s worth, I think the pics look great!
