Brownie a la Mode Layer Cake

Guys, I hope you all can forgive me for hoarding this recipe for such a long period of time.

It is way a long period of time if Brownie a la Mode Layer Cake is what we’re talking about.



Vanilla-Macadamia Nut Ice-cream sandwiched between two layers of fudgy chocolaty brownie and topped with the most luscious ganache you’ll ever put into your mouth. How could you not be drooling all over your keyboard by now?

I’m sure you all are, don’t deny it.

I mean, I feel like crying because there’s not any of it left. Not a single crumb. It lasted mere seconds in the birthday table, and now I do regret having shared it with my family.

I’m not evil, I’m just a layer cake lover.



But this guys, was the best cake I’ve ever made. Mum couldn’t have wished for a better birthday present (or so she said!). Lucky her, she got to have the biggest slice. If I could go back in time, I would make this for my brithday so as to be me who has the biggest one hehe!

Oh, the awesomeness of this. I know I do say it in pretty much every post I write, but this cake was the best one I’ve ever made *pinky promise*, I’m not lying here. And yes, I know it’s on the chilly side right now and that this cake qualifies as ice-cream… but c’mon, you can always eat it in front of a fireplace, buried under fluffy blankets and with a mug of hot coffe by your side. Now, that’s a perfect Sunday plan, right?



One thing I’d like to remind you is that you should use storebought ice-cream. Yes, yes, I know it’s not as tasty as homemade. And probably not quite as healthy, because of all those additives and thickeners they put into the storebought stuff. But, it’s those thickeners which allow the ice-cream to keep its form for longer, so it doesn’t melt before you get to eat it. If you want a good-looking cake, choose storebought this time. The deliciousness of the cake is worth putting every single one of those thickeners into your mouth. Moderation is the key, you know.

Other than that, the cake is pretty easy to make, but do read all the instructions before you attempt to assemble it, ok?

Cake heaven, here we go!


Brownie a la Mode Layer Cake

Serves 12
Meal type Dessert
Misc Child Friendly, Freezable, Pre-preparable, Serve Cold
Occasion Birthday Party, Casual Party, Formal Party


  • 500 Ml. vanilla ice-cream (storebought please!)


  • 350 Grams flour
  • 280 Grams sugar
  • 135 Grams cocoa powder
  • 1/2 Tsp baking powder
  • a Pinch of salt
  • 3 eggs
  • 300 Ml. buttermilk
  • 200 Ml. brewed coffee (decaf will do)
  • 180 Grams melted butter


  • 200 Ml. heavy cream
  • 250 Grams milk chocolate
  • 50 Grams butter


For the cake, mix all of teh dry ingredients in a bowl, and then add all of the wet ones minus the coffee.
Whisk until ombined and add coffee. Batter will be quite thin.
Pour batter into two 22cm. round pans and bake at 200ºC (400F) for 25-30 minutes.
Let it cool before you slice it. And freeze one hour prior to assemble the cake.
To assemble the cake, make sure that it is completely cool so you can slice it perfectly.
Once you have two perfect disk, spread a very thick layer of ice-cream into one round, and top with the other one. Freeze the cake.
To make the ganache, boil the cream and then remove it from heat and add chocolate and butter, stirring until they both melt and ganache looks smooth and glossy.
Let the ganache cool before you pour it on the cake.
Once you pour it, freeze. cake inmediately
Get it out of the freezer one hour before you plan to serve it so you can slice it.


If you really like chocolate, you can use dark instead of milk chocolate for the ganache.

Use storebought ice-cream, as thickeners will help the cake keep its form.

Make sure that the ganache has cooled off and that the cake is frozen before you pour it!

    Oh Consuelo – this is out of this world! As a huge chocolate, brownie, and ice cream lover, I just adore it! I usually make an ice cream cake for my son’s birthday – I did a brownie bottom, ice cream, and ganache cake this year but it was not nearly as decadent and awesome as this. Your mom (and everyone who got to eat this) is so lucky. I totally believe you when you say this is the best. Yum!
