Warm Butternut Squash and Bacon Salad with Spiced Walnuts

I’m going to keep today’s post short and sweet since I think you already now how busy I am these days. As my computer broke down a few days ago and now I’m forced to borrow my little brother’s, I’m only able to write as night, after a long, exhausting day. Needless to say I’m worn out, both physically and mentally *sighs*.

But do you guys know what makes hectic days better?




Crispy, salty, amazing bacon.

And if you add spiced pecans, warm asparagus, sauteed butternut squash and crumbled blue cheese as well, you’ve got a wonderful enough salad to get you through the most weary days. Trust me, this salad is A-M-A-Z-I-N-G, one of the best I’ve ever eaten, and I tell you that I eat a lot of salad. And awfully big lot, actually… like, If I got paid for eating lettuce, I’d be a billionaire by now, I love my greens!



But this one is even better, it’s like a massive flavor party in your mouth… what a wonderful combo! You know it has to be great if it’s got bacon in it, don’t you?

Although it’s not only bacon-laden salad what it’s keeping me happy these terrible days (enter Biochemistry exam on Thursday, I’m so nervous!), but your sweet comments on my last post. I have no words to describe how grateful I am to have you all as readers and friends. You guys make my day! I usually read all the comments on my phone when I wake up, and you always get to put a smile on my face before I even get of of bed. I mean, it’s YOU who make me want to get up, dress and and go work out. Heck, you even make me go to workout all happy (and spinning at 6:30 is not my definition of fun, it makes i hard to get up!). Again: thank you. You’re the best readers that someone could ever wish for!



So in exchange for you lovely comments, I’ll give you some advice: make this salad as soon as possible. Stop all you’re doing now and go buy some bacon and stuff your face with letucce. You won’t regret it 😉

And by the way, I got the inspiration from one of my favorite blogs. This bacon, brussels sprouts and blue cheese salad at Erin’s blog has been calling my name ever since I saw it, so I knew I had to try that combo asap!


-Warm Butternut Squash and Bacon Salad with Spiced Walnuts

Serves 2
Prep time 15 minutes
Dietary Diabetic, Gluten Free
Meal type Lunch, Salad, Side Dish
Occasion Barbecue
Pecans would make a great addition as well.


  • 150 Grams lambs lettuce
  • 150 Grams butternut squash
  • 6-7 asparagus
  • 80 Grams bacon
  • 1/4 cup walnuts
  • a Pinch of pumpkin pie spice
  • 40 Grams blue cheese


Sautee bacon. Use the leftover grease on the pan to sautee asparagus and butternut squash as well.
Sautee walnuts with a bit of olive oil or butter if desired and a pinch of pumkin pie spice.
Melt blue cheese in the microwave for 10 seconds or so.
Add all of the ingredients to a bowl and stir to combine.

    I hear ya on being tired. I need a day OFF. Which is weird, because I just went on vacation, but it wasn’t too relaxing. Maybe I’ll just soothe my ails with this bacony salad. That seems like the best course of action 😉

      What’s marmolado, though? And do you mean the measures in cups and tbsp.? Because I think there are a lot of translators around the web, but I usually use grams because it’s what works better for me! I wish I could be more helpful!

    Wow these salads look nothing short of AMAZING!! Being in college, I’m limited in my healthy choices, but I have to saw, we have a pretty good salad bar and I’m super thankful for that! Nothing as gourmet and delicious as this though!! Very inspiring!

    I love getting creative with salads because they tend to be so boring. The butternut squash gives it a lovely Fall touch and you can never go wrong with adding bacon (unless you’re a vegetarian of course). This salad is gorgeous and looks like something I’d get from a fancy restaurant. 🙂
