Skinny Ham Mac & Cheese

Sometimes I can be a really nice sister, but let’s face it, most of times I’m the kind of mean sister who fills an empty nutella jar with homemade nutella (obviously not as good as storebought gah at least mine wasn’t) and doesn’t tell her brothers so they think it’s the real thing. That’ll teach them not to eat my baking supplies (chocolate chip bags waiting to be part of cookies devoured by little brothers anyone?) ha.



Although this week I’m being a cool one. Yeah, I think I told you before that my brother is lending me his laptop these days so I am able to blog, since mine crashed down last weekend… somehow, I have to return the favor.

And as a reward to my brother for being all nice and let me borrow his computer, I baked mac & cheese for him. Ham mac & cheese, in particular, aka his very favorite kind. Plus my parents will be out of town this weekend, and they’ve left me in charge of meal-planning, so he’ll be having pancakes and waffles for brekkie everyday. And pizza and lasagna for dinner. And cake, he loves cake too.

See? I can be a really nice sister, I told you.



I think that after trying these, I’m his favorite sister… the fact that I’m his only one has nothing to do with it, duh. But c’mon, one bite of these mac & cheese and I’m instantly everybody’s favorite sister. Yeah, these are so awesome that even if it was my neighboors who tried these, I’d become their favorite sister, I tell you. Does this even make sense? No? I think I need a nap. And mac & cheese. To make my mind work properly, you know.


Anyway. Cheesy mac & cheese with spicy ham bits = perfection. May I tell you that this are super healthy as well? Yeah they are. You know how I’m a sucker for greek yogurt and I couldn’t help it but add it to this as well. Result? Creamy dreamy mac & cheese with much less calories and fats and much more protein. Ladies and gents: we’ve got a winner here.

So you guys make this. And don’t you ever think about telling my brother. He loves these so much that he’d persuade you to send him a big container of these… and shipping stuff to Spain is really expansive, I tell you.


-Skinny Ham Mac & Cheese

Prep time 25 minutes
Meal type Lunch, Main Dish
Misc Child Friendly, Freezable, Pre-preparable, Serve Cold, Serve Hot


  • 350 Grams ham
  • 1 Tsp. extra spicy cajun spice
  • 500 Grams cooked whole wheat macaroni
  • 1/2 cup tomato sauce
  • 1/3 cup bbq sauce
  • 100 Grams shredded cheese (for the topping)
  • olive oil for the pan

cheese sauce

  • 300 Grams fat free greek yogurt
  • salt
  • pepper
  • 150 Grams strong cheese (such as parmesan or manchego)


Stir greek yogurt, salt, pepper and strong cheese together to form a creamy sauce. Set aside.
Heat some oil in a pan and when it's hot, add ham and cajun spice and sautee until crispy.
Add cooked macaroni, bbq and tomato sauce, more salt if needed and stir.
Add the cheese sauce, stir and sautee for 5 minutes.
Remove pan from heat and pour macaroni in a baking dish.
Top with shredded cheese.
Bake at 250ΒΊC until cheese is golden. This will take about 15 minutes in a non-preheated oven, since everything is already cooked.


Don't use a mild cheese for the cheese sauce or it'll taste more of yogurt than it should.

    Consuelo, I don’t have a sister, and after reading this post I officially want to ask you to please, please be my new-favorite sister, too! I won’t even get mad if you put homemade Nutella in my jars (actually, I think I’d love you even more!). Of course, I adore the use of Greek yogurt here (so healthy and creamy-good!), and I’m just ga-ga over the BBQ ham and cajun spice. Seriously brilliant! I really and truly was just on my way out the door to the grocery store, and I’m gonna march right back over, snatch up my grocery list, and add these ingredients to it so I can make this ASAP.     I love how you add greek yoghurt to almost everything. I’m obsessed with greek yoghurt, but I’ve never thought about adding it to mac and cheese. Sounds delicious!
