Pumpkin Mini Cheesecakes with Salted Caramel Topping

My computer crashed down and I’ve lost most of my photographies and work, and believe me, I was trying to stop being all moany in my posts, but this is a real problem to complain about. Luckily, my brother lend me his laptop and I’ll be trying to blog from here, but I don’t think I can borrow it as much as I need it. It will have to do for now, I guess.

This was meant to be a post about happy stuff. Awesome things like the friends I’ve made since I started blogging. Seriously guys, you’re all awesome and I don’t know what I’d do without all your support. Thank you so much for reading my blog, commenting on my posts and making this blogging thing so worthy! You’re the ones who keep me going when I feel I have a lot of problems to deal with and I feel like going to sleep instead of running the blog, studying and training. You can’t imagine how grateful I am that I have you here.

 


 

I’d like to thank my friend Kristi @ Inspiration Kitchen because she was on of the first people who supported my blog. I still remember the first time she sent me a personal email, because it truly made my day and kept me smiling for days. I feel so lucky that I have her reading my blog!

I loved that she thought of me when she realised that today is National Pumpkin Cheesecake Day, because she knows that I’m a sucker for all things cheesecake. I love that stuff! To celebrate friendship and this special day, she posted a recipe for Pumpkin Cheesecake which looks out of this world amazing! Check it out, I’m sure it will have you all drooling in seconds.

Now, let’s get serious here. If you don’t read Kristi’s blog yet, please DO. I’m sure you’ll going to love her style. Not only is she a sweet person, but a really talented cook and photographer as well. Her recipes are flawless, look? Do you like bacon, chitpotle maybe? She has you covered. So what did I make to celebrate National Cheesecake Day? I’ve got these little Pumpkin Cheesecakes with a Salted Caramel Topping that is to die for. Aren’t mini desserts the most adorable thing ever?? They’re almost to cute to eat. Almost.

They’re creamy, they’re pumpkin-y, they’re sweet, they’re salty… all that you could ever ask for in mini form.

 

-Pumpkin Mini Cheesecakes with Salted Caramel Topping

Serves 6
Meal type Dessert
Misc Child Friendly, Freezable, Serve Cold
Occasion Birthday Party, Casual Party, Thanksgiving

Ingredients

  • 300 Grams light cream cheese
  • 200 Grams 2% greek yogurt
  • 1/4 Cup + 1 tbsp. pumpkin pure
  • 2 Tbsp. sugar
  • 2 Tbsp. caramel sauce
  • 3 Sheets of gelatin
  • 1 Vanilla pod
  • 1/2 Tsp. cinnamon
  • 1/4 Tsp. nutmeg
  • 1/4 Tsp. ginger
  • 70 Grams cinnamon cookies
  • 2 Tbsp. almond meal
  • 3 Tbsp. melted butter
  • 1/3 cup salted caramel sauce (link to recipe below)

Directions

1.
Reduce the cookies to crumbs and add almond meal and melted butter. Press mixture into mini pans.
2.
Beat 2 tbsp. of caramel, the greek yogurt, cream cheese, pumpkin pure, sugar add spices until fluffy.
3.
Soak the gelatine sheets in cold water. When hydrated, squeeze out excess water and dissolve in one tbsp. of boiling water.
4.
Warm the cream cheese mixture a bit before adding the gelatine to it or lumps will appear.
5.
Mix gelatin and cream cheese mixture and spoon out mixture into pans.
6.
Refrigerate or freeze until they set.
7.
Right before you're going to eat them, top them with caramel sauce.

Note

You must add the caramel sauce right before serving them, otherwise, the cheesecake will soak up the liquid.

I used homemade pumpkin pure because we cannot get storebought in Spain. You can see how I made it here.

This is the salted caramel sauce I used. It's quick, easy and amazing!

These are best served a bit frozen, because they taste like pumpkin ice-cream yum!

    Oh, this is a beautiful thing… I think I need to make them. Soon! As in I want to go home and make them now!!

    I’m very new to the food blog world, and I know what you mean, I will be forever grateful to those who were the first to follow me… That very first comment I received.. I’ll never forget it! I didn’t realize just how hard it would be to find my way into the community, but I’ll keep plugging along! I think I have 9 followers now, 6 of whom are family!! Lol..there is a lot to learn, but I’m loving every minute of it.

    Ugh sorry about the computer! I hate when stuff like that happens … it feels like you have no control over that sort of thing!

    But these cheesecakes sound amazing. I love mini cheesecakes (somehow it feels better when I eat a few of them versus a slice of a big cheesecake lol flawed logic but that’s okay) and with pumpkin and the salted caramel topping?? Yes and yes!!

    Oh, that has to stink! I’m always worried about that happening. We’ve had some good storms with lightening strikes very close by. My neighbors computer got fried. 🙁 Hope you get yours fixed soon.
    These little cheese cakes look delicious! I love the caramel sauce you added on top. Just the thought makes my mouth water. lol

    ¡Madre del amor hermoso!! Estoy salivando, Consuelo, eso debe estar de muerte, pero no lo puedo hacer hasta que no estén mis hijas aquí.

    Una sugerencia…¿Podrías alguna vez poner algo preparado para diabéticos? Te lo agradecería muchísimo. Me pirra (chifla, vuelve loca) el dulce pero no puedo..

    Si no, no pasa nada, mis niás disfrutan de lo que hago para ellas pero ¡¡yo no puedo probarlos!!

    Love that you used greek yogurt and light cream cheese, makes it much healthier and adds protein. The combination of pumpkin and salted caramel I am sure is heavenly!

    And thank you for sharing these scrumptious mini cheesecakes. I love anything that’s miniature, especially when it’s for a dessert as rich as cheesecake. Also, so happy to see a no-bake cheesecake recipe. For whatever reason, I’ve always been especially fond of no-bake cheesecakes!

    Ah, ¡qué buena pinta! Tengo calabazas a cascoporro así que, si nada me detiene, éste finde cogeré al “sombrerero loco” y nos pondremos manos a la obra (llevando tarta de queso, tiene que estar bueno por narices:-)).

    Siento lo del ordenador…¿no hay forma de recuperar los archivos? Yo tengo un máster en “file recovery” desde que, hace años, experimenté lo que era perder todos los apuntes del primer año de universidad, sin haber terminado el curso (sic). Si se te puede echar una mano, por aquí estamos.

      La verdad es que no lo sé. Se lo dejé a un amaigo informático para ver qué podía hacer con él, porque el problema es que no se enciende… no sé si los archivos están ahí. Siento mucho lo de la universidad, suena terrible. Yo he perdido los apuntes de una semana y mira que no eran muchos, pero me ha fastidiado un montón :(( Gracias por vuestra ayuda igualmente.
