Butternut Squash and Potato Hash

Sorry I’ve been MIA for the past two days… Ok it might not be a long time but it is for me. You don’t know how much I’ve missed blogging. Thing is that I had to move house yesterday. Enter moving hundreds of (super fragile) props from one house to another. Terrible, I tell you. You may think I do not own that big amount of props because I’m always using the same blue plate (but it’s a lovely one so ssshh), but I actually have a large collection that is exhausting to pack and unpack, trust me. Add up tons of homework, workouts and school… let’s say that my week has been on the exhausting side (and it’s only wednesday, what!).

But I don’t want to be all whiny and stuff, so let’s talk food now. Fall comfort food, to be exact. Is there anything better this time of the year?


So, do you guys remember the 3/1 seasonal challenge Stephanie and I have been doing for the past two months? She made a recipe round-up that you can see here, and I’m planning on creating a blog page explaining the rules and stuff when I get round to. But as for the moment, I’ll tell you that October’s ingredient is butternut squash. I was a bit skeptical at first, because it isn’t very popular over here so we’d never eaten them before, and I suspected my family wouldn’t like it. Turns out they do, but how could they dislike this breakfast hash with crispy potatoes and butternut squash, salty serrano ham, fresh aspargus and Manchego cheese? Well, I think it’s impossible not to like it because it makes a delicious breakfast perfect for weekend mornings!



So this is my breakfast idea for the 3/1 seasonal challenge. Simple ingredients combined to get an extra tasty dish that double duties as breakfast and dinner. And it’s healthy too!

Butternut Squash and Potato Hash

Serves 2
Dietary Gluten Free
Meal type Breakfast, Lunch, Side Dish
Misc Serve Hot


  • 2 Small potatoes
  • 250 Gr. butternut squash
  • 1 Medium onion
  • 2 Cloves garlic
  • 6-7 asparagus
  • 100 Gr. serrano ham
  • 1-2 Tbsp. manchego cheese (grated)
  • extra virgin olive oil (for the pan)
  • 1 Tsp. dried oregano
  • 1/4 Tsp. smoked paprika


Cube butternut squash and potatoes. Parboil them for 5-6 minutes so they are soft and get crispy sooner when you fry them.
Julienne onion and mince garlic.
Heat some olive oil in a pan, and when it's hot, add potatoes, garlic, butternut squash, onions, ham, salt, spices and asparagus and sautee for 15 minutes (on medium heat so it doesn't burn!) until done.
While it's still hot, add some manchego cheese on top so it gets melty.


You may use parmesan and bacon if you can't find Manchego cheese and Serrano Ham.

    This is indeed great Fall comfort food! Moving is no fun at all, even without the added stress of school and work! I hope you are settling in now. I know what you mean about how you missed blogging – when we had a big storm last year around this time, our computer/phone were down for almost 2 weeks and it was driving me crazy after two days…I really missed blogging.     Oh, I feel your pain! I haven’t moved recently, but the last time we did (3 years ago) I remember it took AGES to pack all the plates and stuff in paper/bubble wrap and then boxes. And the sad thing is, I’ve accumulated way more stuff since then, so I’m sure the next time we move it will be a month-long process. Ugh. But at least you’re settled now, right? And you have some delicious potato hash to comfort you after all that work! 🙂

    I find it difficult to move my stuff from my study table to my shelf, I’d be a ridiculous mess if I were to move house! This is the kind of breakfast that I’d more than happily eat! It looks gorgeous and the colorssssss!!! They are making me hungry!
