It’s been only two days of school and I’m already worn out. So so waiting for the weekend to come it’s almost unreal… I’d have never said it’d be this hard, but I guess that I’ll have to keep going, right?? It’s such a pity I’ve had to give up writing the Spanish version :(( I mean, it is still working, but from now on, it’s mum who writes it (thanks mum!).
I’ve been living on make ahead meals and quick to prepare recipes all week, and I can’t wait to share some of them with you all. I’m sure that a lof of you guys are super busy now, and tasty, healthy make-ahead meals are always helpful, aren’t they?
But for now let’s talk about this salad. It’s heavenly, guys. The goat cheese + fig combo makes my heart race with joy… I just love it so much! Add caramelized onions and the whole thing turns (even) better… because is there anything that caramelized onions can’t improve? (yeah, probably brownies and cake BUT)… that stuff is genius and now I can’t stop adding it to every salad I make. I must say though, that this is not the way to caramelize onion properly. That’d take hours, and as for the moment, I’m not thinking about spending the little time I have making salad. This is awesome enough as it is, anyway.
If you’ve never tried warm salads, you definitely have to give them a try. There’s something about warm, melty goat cheese and sweet onions that put me in a good mood. And I need to be in a good mood to be a productive girl. No way I can study properly feeling grumpy!
And now guys tell me: which is a food or combo which puts you in a good mood whenever you’re feeling stressed?
