Coconut Caramel Espresso Pannacota (+ Real Coffee Review)

Hello my loves! I’m teaming up with my friends over at Real Coffee today to bring you a review on their lovely coffee capsules + a recipe (which you’ll absolutely love!). All opinions are, as always, my own.

If there’s anything in the world I like better than a cup of strong-brewed, quality black coffee then… oh wait: there isn’t.

I don’t know about you but I’m definitely a coffee aficionado. I guess it comes with the job: student by day at night, photographer of all things foody when I’m not in uni and then writer on my very sparse free moments again. Work work work – it’s not as if I ever got much sleept at all (definitely not as many naps as I would like to). So, while we’re here, I’d like to thank coffee to take me this far. I love what I do for a living and I’m pretty happy with my degree choices (I study food engineering – see? Also coffee-related) but I gotta admit it can get tiring sometimes, so a warm cuppa is always a great choice.

There’s one thing I really, really, really cannot put up with. I mean, not just one, but you get me.  

Sugar in my black coffee: my absolute nemesis. It’s funny becasue I’ve been drinking and enjoying coffee ever since I was a small kid, but I don’t think I’ve ever willingly sweetened it #ugh. As I was saying earlier, I’m a bit of a coffee snob, so I can’t help but see it as an insult when you take quality coffee and put something in it (milk is another no no for me), except if we’re talking coffee-flavoured desserts like in this glorious case.

Real Coffee capsules for Nespresso are the kind of coffee that I have to drink pure and unadultered. Their aroma is so enticing and inviting that I wouldn’t want it to mask it with anything else. Is there anything more enjoyable that a  espresso shot of this Sumatra blend? I really don’t think so! Perfect companion for a good book in bed on a chilly autumn morning.

Of course, if you enjoy milk & sugar in your coffee, you will enjoy the capsules nonetheless. I don’t persoanlly get it but I see my mother enjoying coffee that way and hey, to each their own! These blends are so good that I don’t think it’s possible to make them taste funky.

Also, you guys know how I try my best to be as eco-friendly as I can, right? Personally I avoid all coffee which isn’t fairtrade. I was told how awful it was for workers when I was little, so that’s something I’ve been avoiding ever since. It’s so nice seeing brands like Real Coffee actually caring for their coffee farmers. How about you pals? Is this something you find important? I’d love to hear your thoughts!

While we are on this eco-friendlier note, I will also mention that these capsules are also organic and you guys know what a big fan of organic food I am!

That being said, Real Coffee capsules are still super affordable. They’re compatible with Nespresso machines, and a lot cheaper than many brands on the market. However, the lower proce point doesn’t mean you have to miss out on quality and a wide variety of flavours. Not at all! They have some of the best blends I’ve ever had, and so many to choose from it’s insane. Let me recommend you three of my latest obessions: Sumatra,  Napoli & Colombia.

Let’s not forget about the Caramel blend though! I love how aromatic and fun this one can be. Personally, I like stronger coffee, but I love adding a shot of this blend to my porridge or put it in my dessert. So good!

This pannacota right here? Holy moly, it is so good. Creamy, smooth and oh, so delicious! Made with coconut cream for an extra oomph and flavoured with vanilla, caramel and espresso. Can it get any better? Oh yes, we’re adding some more caramel on top and then fresh berries, because fresh berries are always a great idea!

This dessert is also vegan and gluten free so it’s a lovely option that will please everyone. Probably not kids, since they’re not the biggest fans of coffee… but hey, they do get to sleep in on the weekend so I think life treats them well enough and we adults deserve some happiness too, right? 😉

I wish we got those sleep-in mornings too, though. I shall leave you know while I go dream about cool mornings in bed with a cup of espresso and some homemade pastries. Ah, that’s the life!

Coconut Caramel Espresso Pannacota

Ingredients

  • For the crust:
  • about 10 cookies of your choice
  • 30 grams coconut oil
  • 10 grams coconut sugar
  • For the pannacota:
  • 600 mililitres coconut cream
  • 50 mililitres maple syrup
  • 1 shot (40 mililitres) Caramel espresso
  • 15 mililitres coconut oil
  • 15 mililitres vanilla extract
  • 1 tsp. agar powder
  • For the caramel:
  • I used this recipe by Soy Division

Instructions

  1. For the crust:
  2. Mash the cookies until they're reduced to crumbs.
  3. Mix them with the melted coconut oil and coconut sugar.
  4. Press teh mixture to the bottom of 3 jars.
  5. Let it chill in the fridge while you prepare the filling.
  6. -
  7. For the filling:
  8. Blend together coconut oil, coconut cream, maple syrup, espresso (must be cold) and vanilla until smooth.
  9. Put mixture in a saucepan and whisk in agar powder.
  10. Bring mixture to a simmer and heat for 5-7 minutes, stirring often. You'll see how the mixture thickens.
  11. Pour mixture into the jars and let them cool before putting them in the fridge to chill overnight.
  12. The day after, top them with the caramel/dulce de leche (see instructions on how to make it clicking the link above) and fresh berries. Enjoy!
